The 2024BY summer gin ban of "Echizen Misaki" has been lifted!
The theme is a sharp summer sake with (rise) acidity (sun).
The smell is melon-like and surprisingly mild 🍈.
It is said to be acidic, but I didn't feel it much! Maybe because I usually prefer habitual? 🤔
The impression is quite refreshing with a good flavor! The aftertaste is bitter, but it disappears quickly and seems to be able to be drunk easily.

This sake was drunk during sightseeing in Awara Onsen. I was grateful for the rare limited edition of 50 bottles that were available only in summer.
It was a pleasant sake with a dry, crisp, Fukui-style flavor, and when served chilled with seafood, it brought out the flavor of the sea.

Echizenmisaki Junmai Ginjyo Ichidotsu Shibori-Ippobottori Hibi-tori Hi-ire Kibi-Irai Unfiltered Harajuku.
When I went to a tasting at Icoma Sake Brewery, the owner said it was very good, so I bought it. It was the one that bouken posted before.
I will drink it cold.
The color is just a hint of yellow.
The top aroma is slightly citrusy.
The mouthfeel is smooth.
The taste is clear and beautifully delicious, with a slightly firm, mature acidity and concentrated umami, and a slightly milky richness that is pleasant.
The finish is slightly dry, with a hint of astringency that lingers on the tongue and a slight alcohol taste.

Echizenmisaki Tailings Sake - May Fire Brewing
This sake is a blend of only Daiginjo and Tailings Sake.
The aroma has a gentle grain ginjo type nuance from the top clearings.
It is soft, clean, and smooth, but a tangy acidity follows, spreading umami and a moderate sweetness.
When the tailings are mixed, the aroma is of rice.
The taste is clean and smooth, and the milky flavor gradually sinks in.
The acidity is masked a little by the tailings, and the acidity and umami intertwine in a well-balanced manner with a moderate sweetness.
It is a relatively refreshing sake with a good sharpness and easy to drink.
It goes well with stewed chicken and sansho (Japanese pepper).
I think I will buy more.
Company drinking party, the third bottle was Sakahomare, a premium sake rice that Fukui is proud of. Fukui has a delicious rice called "Hachihomare," and is indeed the birthplace of Koshihikari. Fukui is the birthplace of Koshihikari. There is a good selection of rice here.
I had always seen Echizen-misaki, but when I saw Ichihomare, I decided to buy it at my regular store.
It is drier than Nozomu and Imanishiki. The aroma is very mild. The aroma is super mild, but you can taste the sweetness of the rice, and it tastes great.
