When I was told that the izakaya had a long-sought-after shot of ikimi, I ordered it without hesitation!
When I drank it, I found that it had sweetness, but after that, there was a chiri-chiri-ness, or alcohol-ness? I had an impression that there was a sharpness from the sweetness!
I drank it because I had a preconceived notion that "射美 = sweet", so I was a bit surprised 😮.
It may be good as a food sake, but it is not something you would drink by itself.
This was my first saké, so I'll have to evaluate different kinds of saké in the future 💦.
3.5/5
Good evening, Satou 😃.
Congratulations on your long awaited first shot beauty ㊗️ 🎉 we are longing for it too 🥹 expectations are so high that our imagination might win out 😅.
Jay & Nobby! Good evening 🌆.
I finally got to drink it 😭 It's not easy to drink it in the Northeast Kanto area, so if you get a chance, please do!
My expectations were so high that I felt like I was being overpowered 💦 lol
In "Imi Junmai Ginjo," the contrasting elements of the "heaping sweetness" and the "vividness of the cleanliness" are clearly perceptible on and off the palate.
At that moment, there is a sense of switching from the deep sea-like world of sweetness to the bright blue sky.
While possessing such a taste typical of "Imi", the one-rank higher "Junmai Ginjo" is clear and has a more refined flavor.
As such, you can certainly enjoy its unique flavor as "射美 is 射美" as always.
The aroma is subdued.
The taste is quite dry for an Imi. The sweetness and umami spread slowly, but the bitterness is rather strong. A good sake for a mid-meal drink.
Himeji? I was taken to a standing bar in Himeji?
I was pretty drunk, so I only had one drink 💦.
Mellow and refreshing! White malted rice, but the acidity was elegant. I think it was a little bit sweet.
I got it in May at a raffle sale at a liquor store 🤩 Thank you very much!
It is sweet and slightly bitter, with a hint of apple and pineapple. The juicy taste gradually fills the entire tongue.
As you continue to drink, you can feel a slight minerality... It is so delicious that you may end up drinking too much of it.

Special aged version: ‼️
It's hard to believe it's been laid up.
Gorgeous cream soda aroma⭕️
The color is a shiny silver
Gentle and pleasant bubbles
Classy sweetness and acidity
And a characteristic, freshly cooked rice flavor⭕️
The aftertaste is very light and long. ⭕️
The smallest sake brewery in Japan, with a production of less than 100 koku. The name "Ibi" comes from the local name "Ibi" and the aspiration to "shoot beautiful sake. Currently, there are only two employees: Shoji Sugihara, who serves as president, and Keiki, the fifth generation of the family, who is responsible for sake brewing.
Rice: Ibi no Homare
Rice polishing ratio: 60
Alcohol content: 16%.
Ibinohomare" is an original rice variety developed by the Sugihara Shuzo brewery in cooperation with local farmers.
This is the first time I've ever had a glass of Arusoe. It has a thin layer of orikori.
It has a refreshing mouthfeel, which is typical of 40% polished aluzoe, and a soft graininess due to the moderate thickness of the umami of the raw sake.
