As soon as I took my seat, I saw an extraordinary lineup.
I had no idea that there was an "Imi" (a kind of Japanese traditional drink)! I was taken aback.
Basically, I think that such rare sake is something I have no connection to, and I can only imagine and think about the taste by looking at the postings of the people at Sake-no-wa....
I met you here, but it's been a hundred years!

I had imagined a slow-sweet sake, but it is surprisingly refreshingly sweet.
The acidity gives the sweetness a three-dimensional effect while also producing a lightness.
I don't know what kind of yeast is used, but the combination of flavor, sweetness, and sourness gives it a hint of aroma that reminds me of strawberries.
I thought it was a dessert type, but it might also be rather food-like in the abe sense.
I never thought I would be able to drink Imi while I was still alive...
I am a little deeply moved. (Laughs)
I'm a first time user of this product, and the aroma is good, but the bitterness and other tastes are what you would call a deep taste. I can't say it tastes very good.
If you try to buy a bottle in Aichi, you can't buy it unless you win a lottery, and you can't choose a type.
The label on the back of the bottle says the brewery's excuse, but I'm sorry that I don't have the taste buds to call this complex flavor delicious.
I wonder if I was a winner or a loser, even though I was able to buy it through the lottery.

I heard that I'll bring a bottle of ♡ but...I never thought it would be an 射美! It's been 6 years since I've had a bottle? I'm so happy 🥹 that it's the first pink label brewed in 6 years!
The sourness and sweetness are emphasized 🍓It has a cute taste that reminds me of strawberry drop 🍓 It is delicious with a clean aftertaste 😚 It was also served to the master and customers and we all enjoyed its deliciousness together 😊.
The cake in the photo, a local sake cake (sake financier) with Shinshu Kamerei Junmai-shu, was also a gift from Dora-san for the girls' party. I've never had such a juicy financier before, it's so moist, elegant and delicious!

We opened a bottle of Imi BLACK, which we were able to purchase last month.
It has a more robust and heavy bitterness than expected, a piquant spiciness that stimulates the tongue, and leaves a long aftertaste of bitterness again with the umami of the rice and a follow-up!
It was a classic, mature sake that was the complete opposite of the modern taste of today's sake.
This sake is more of a food sake than a stand-alone sake, and can be paired perfectly with fish and rich meat dishes.
I ordered it as soon as I heard that Imi was available at my favorite bar 😊.
It tasted fruity and strawberry-like on the palate with medium sweetness, low gasiness, a little strong alcohol with a chocolate-like aftertaste and a strong rice flavor 😊.
I'm happy to have found a sake I've always wanted to try someday, thanks for the treat 🍶.

Imi BLACK [Sugihara Shuzo, Gifu Prefecture, Japan
Slight melon taste from the crisp mouthfeel. Slight sweetness and astringent aftertaste. It is crisp and clear.
Ingredients : Rice, Rice malt
Rice used: 100% domestic rice (Sake rice: Ibi no Homare)
Rice polishing ratio: 80
Alcohol content: 17%.
Unfiltered unpasteurized sake
