Sugihara Sake Brewery in Gifu, which brews Imi and Chiyonohana.
At the beginning of this year, we learned of the sudden death of Shoji Sugihara, the fourth-generation brewer, from the back etiquette of this year's Imi, which someone had checked in.
I am very sorry to hear of his sudden passing, and I pray for his soul rest in peace.
We offered a toast with the BY1 Sagami, which was probably brewed with Mr. Hiroki Sugihara, the fifth generation of the family, in his days.
The color of the liquid was originally a strong haze, which was thought to have been a solid orikara or light nigori, but it became a complex color with a golden green tinge after aging.
The aroma is also complex, with the original sweetness and the fermentation of the sake's tailings coming through the aging process.
The taste is smooth and thick, with plenty of residues.
Although the sense of maturity is quite strong and peculiar, the original sweetness and umami can be felt with a round and thick texture.
I would like to continue to drink and support the sake brewed by the fifth generation, Hiroki-san, who is following in the footsteps of the fourth generation, Shoji Sugihara, with his brews such as Imi and Chiyonohana.

The aroma is peachy. The aroma is like a peach 😄It has a beautiful aroma, and when you drink it, the sweetness comes through, followed by umami and a good acidity. The bitterness at the end is also indescribable. The sharpness is also good. The balance is very good. It is not too sweet, but a nice sweetness runs around in the mouth. It is delicious.
