All sake is made from pure rice brewed in a tank and pressed with the blessings of mountain grates and underground water from Shakagatake in the Suzuka Mountains.
The brewer's passion for sake is expressed by carefully balancing the sake as a whole by drawing out the characteristics of each rice.
Bourru = Nigori (nigori)
Bourru = nigori (a refreshing sourness and sweetness). It is a light nigori special junmai sake with a rich aroma suitable for summer.

I asked the liquor store, "Do you have any summer boulleu?" I asked the liquor store, "Do you have any summer bourroux? Now! I was surprised. What is it? I was just about to ask, when I came upon the toji-san carrying cardboard boxes from his truck. It might have been the first and last time I bought directly from the cardboard boxes that had just arrived, not from the liquor store's refrigerator.
I had such memories.
Come to think of it, it has "Tamitsu" on the lid, which I didn't have in 23 years. Maybe I'll drink some more Tamitsu.

Sweet and refreshing aroma and taste like pineapple. Fruity with a slightly bitter aftertaste, it was very easy to drink without any sweetness. Delicious! And cheap!
They say it comes in every year around 2-3 weeks in June.
A colleague at work said that only nigori (cloudy) sake would win.
I warned him that it was not the nigori-style sake that I like.

As the name "summer nigori" suggests, it has a refreshing acidity. It is easy to drink and has a gentle taste on the palate.

Today we will open a bottle of Hayakawa Sake Brewery's Early Spring Summer Bourru.
I had given up on it because it had been a while since I had heard about it from Sake-no-Wawa, but I received a notice from the liquor store where I buy Mie sake that it was still available, so I got it without hesitation.
So let's have it right away.
The aroma is gentle and sweet.
First of all, I drank it without mixing the lees.
When you put it in your mouth, the sweet, fresh, and astringent taste comes in a flash, and it is quite tasty.
The bitter taste flows smoothly in the end, so it is not too sweet and is very easy to drink.
When you roll it around in your mouth, you can feel the sake flavor and it is very satisfying to drink.
Next, I mixed the lees and drank it.
The spiciness and bitterness are a little more intense and refreshing.
It also has a chili chili feeling, and I felt it was a very energetic sake.
Of course, the sweetness is still there and very tasty.

Bourru" is a French word used for Bordeaux wine, which is made from grape juice on its way to becoming wine, and means "cloudy.
The first glass of cold sake, immediately after opening the bottle, has a minerality and a slightly salty taste. The nose and tongue are slightly sweet with a mushroom-like flavor...followed by a gentle bitterness.
The second glass, as the temperature rises, there is a slight pineapple or banana-like sweet fruitiness, a hint of malted rice... and it finishes with a refreshing acidity that lingers on the tongue. The good balance of sweet and sour taste increases the sensitivity 🥰.

The smooth, smooth mouthfeel has a pineapple-like acidity. It is juicy and sweet, but has a clean and elegant aftertaste that does not feel heavy. It is very delicious.
