Today I had a drink at my favorite yakitori restaurant for the first time in a while.
The first drink was Nozomu, which I drank for the first time.
The owner said that the taste might have changed since the first bottle was opened, but I chose it without hesitation because it is rare to find a sake from Tochigi.

It is smooth and easy to drink.
The spiciness in the second half finishes it off and the lingering bitterness is nice, so I thought it was very well-balanced.
Encountering this kind of sake reminds me once again what a delicious junmai sake it is 🎵.
It had a soft, crisp taste on the palate and was clear and dry.

Comparison of 3 kinds of Wakakoma
Not sweet, but not extremely dry either. It has a sharp and clean aftertaste.
There was a taste I recognized, but I couldn't figure out what it was. Later, I read in the description that the sweetness and sourness of Aizan can be felt, so maybe it is a taste of Aizan.
