Yesterday's report
The third glass was Chibitigawa, well-balanced in taste and aroma. The local sake around Naoetsu has a strong aroma. I heard that the wells in Naoetsu have a strong golden air in the water, but I guess it changes in the manufacturing process when it comes to sake. Thank you for your hard work while thinking about the time and effort of these manufacturers.

Chibigawa
I heard it is read as Chibi-bita -> chibi-ta -> oden -> 🍢, right 😆.
This sake rice is also new to me.
I imagined it would taste like the Midorikawa I drank earlier, but it's quite thick and robust. It's totally different from the impression on the label 💦.
Since I was eating, I liked this one better with side dishes. There were two different opinions as to which one I liked better. It's fun to hear the reasons.
Yeah, it's still light outside 🔆.
Aromatic sweetness like amazake spreads, followed by a slight bitterness that remains. The color is pure white, just like the name.

It is not as smooth as I thought it would be. A little sweet, then spicy. It's also good for Daifuku 😅If you keep drinking it, it has a little bitterness.

Since the sale of snowballs is over, I started with the stock of tiger cubs.
The next stop was the Tachibanagura Sake Brewery. The fourth photo shows an accommodation on the premises. The fourth photo shows the accommodation on the premises, which the proprietress says is operated by a different company. I bought a bottle of Mujinzou unfiltered unpasteurized sake brewed with Saku's Hitogokochi. It has a nice aroma and a dry taste. The alcohol content is 17 degrees. But it was easy to drink and delicious.

Another label of the well-known "Murayusuke" (🍶)
Aroma is a little subdued 😌.
Good balance of sweetness and sourness 🎵
Mild and smooth on the palate with good umami ✨.
A "bad" sake that you could drink all the time lol

Fruity first impression. Overall, it is sweet and slightly acidic. But it is relatively refreshing and tasty.

This is a sake from the Murayu brewery👍.
The acidity is very attractive.
Three of my best friends from high school were on our annual golf and sake trip. This was my first time in Kochi. After golf, we were taken to Katsurahama Beach to see the statue of Ryoma. I was surprised at how big it was. Then we had a party at an elegant restaurant. I started with Izo the Manslayer. Dry sake.

I haven't been to Tosa, Kochi, a tropical island in Japan, for a long time.
After mowing the lawn, I went to Shunya in town to experience Kochi culture!
Before having a tatami room with the proprietress, let's have some Kochi Sake first!
There are 12 kinds of Tosa sake in 300ml bottles at this store!
Choose the one you are interested in and drink it!
Famous for Okada Izura and Hitokiri Izura!
The sake is light and dry, like a representative of Kochi sake!
We didn't have any CEL24 sake here today, so let's enjoy the dry sake 😌.
After mowing the lawn, we went for a walk on Katsurahama beach 🚶.

There are aromas of mitarashi, cooked rice, pear, and honeysuckle. The attack is rather weak, with mild acidity, residual sugar and a rather long finish.

2nd cup of brewery tasting 😆 Rather yellow 😳, tastes like it's meant to be heated. Mellow and gradually delicious. I think it's probably not at its full potential in a cold tasting.

Sake purchased at the Kisogawa Station site of the Shiga Sake Brewery Opening event.
It has a thick nigori color and a heavy, gutsy mouthfeel. It felt much spicier than when I tasted it. As the description says, it is best served at room temperature or warmed.
I wondered if it was the magic of the tasting. I thought so, but when I drank it at room temperature, it was close to the impression of the tasting.
I could taste the sweetness, but it was basically spicy and alcoholic. I was probably drunk and buggy when I tasted it.
Tastes great with soda.
I felt like it would go well with pineapple when mixed with soda 🍍.
Japanese>English
The one I bought at the Kisegawa venue of the Shiga brewery opening event.
It has a strong alcohol taste with a lot of gusto. It has a strong sweetness and umami of rice.
It is better at room temperature, but it is also good on the rocks or with soda.
After a week, it still has a strong alcoholic taste, but I think the sweetness has increased.
Unlike regular Jyuseki, it seems to use a yeast called Kyo-no-Saki that produces a lot of malic acid.
It doesn't say, but according to Nisshimura Sake Brewery's Instagram, it is an unfiltered sake.
It is gorgeous, like rum, and a little bitter. The sweetness is moderate. Or rather spicy? The cool taste is perfect for the coming season!
As the temperature rises, the appleiness comes out, but at the same time the spiciness increases.
Personally, I prefer the "Jujishi" that I've had so far.
I made a mistake when I drank it before, but I have to mix the Jujyoku with the sake, otherwise the lees sink to the bottom and the taste changes a lot.
If you drink it with the lees mixed in, it might have a little sweetness.

Kore is super pineapple, then flows with a bitter taste too 🍍.
A bottle from Sumino Sake Shop's November distribution 🍶.
I drank the one from the previous season, but it has a more pineapple feel to it: ⤴️
The label for the raw sake is now a fresh white base 💡.
