もふりーとSo after work, it's weekend drinking time! Today we went to Fujiki Shoten in the Ikebukuro area for the first time in a while.
We started with a summer sake. Ginban Special Junmai Summer Limited Edition. It has an astringent taste when it first starts, but later on, refreshing acidity and umami follow. This kind of sake is very summery. TonyLychee-like aroma, elegant sweetness on the palate, and finally a spiciness on the tongue! TonyIt had a gorgeous apple-like aroma, and when you put it in your mouth, the elegant sweetness spread out and seemed to disappear with a tangy, spicy feeling underneath. It also went well with rape blossoms with vinegared miso. じまじろうIt was quite tasty!
My favorite! maruAll-you-can-drink sake from 47 prefectures.
You can pour your favorite sake from the refrigerator by yourself, so if you like sake, you will enjoy it very much.
However, the pouring place is at the entrance of the restaurant, which is very cramped with people coming and going.

My companion doesn't drink much Sake so we left after 2 glasses💦.

SABA de SHU
Saba de Shu is a sake brewed in Ibaraki Prefecture and specially made for mackerel!
Isn't there a lot of such sake these days⁉️?
Well, it doesn't matter 😁.
I don't know the specs, but it looks like it's alsobeerated.
I wonder if it's suitable for my taste.

Even Asoe is convinced!
It is a very good combination of the fatty blue fish and the backstrap throw ❗️.

Wakatsuru Dry Gen Platinum Label
The concept of "Gen" is to create a sake that is not boring to the taste of Genin people!
That may be true 😊.
The flavor is centered on the deliciousness of the rice.
The taste spreads in the mouth
The bitterness is also crisp and clean
It brings out the best of the meal

Kaisen Tokubetsu Junmai Gen no Sake
Sake from Fussa, Tokyo
The sake brewery must have a lot of confidence in their sake, since they proudly call it "Genki-no-shu" 😁.
The store didn't replenish in time, so it's almost at room temperature, but here goes!
Not bad!
More rice flavor than sweetness.
Smooth on the palate.
Finishes with a firm kick.
Slightly dry
It also goes well with horse mackerel. ❗️

Shichiken Junmai Furin Bizan
The specifications are undisclosed, but the rice is grown by contract farmers in Yamanashi Prefecture 😊.
On the back of the label, it is described as "a refreshing dry taste with the umami of rice penetrating through"!
If that's the case, I think they should disclose the rice used for the sake...
Mellow aroma of grapes, just like Koshu sake!
The taste is as described, refreshing and dry ❗️.
It is a sake from a prefecture without sea, but it also goes well with Aji no Namenro 👍👍.

Junmai Ginpu Kunimare
Sake from (supposedly) Japan's northernmost sake brewery!
I went there twice!
The spring water from Mt. Shokanbetsu is used as brewing water, and you can pump it out freely at the brewery!
The water was soft and tasty👍
Now this time
Aroma that reminds you of a sharp and dry taste
It's the same on the palate!
It has a full-bodied, bitter flavor and a great sharpness, making it totally dry!
Perfect with fatty horse mackerel 👌
