Biribiri. Strong flavor. I requested for a stronger flavor toward the latter half of the bottle, and chose one of the selections that came out.
I tended to think of Niigata sake as clear, light and dry, but it was a dry sake with a proper sense of gravity. It was great because I paired it with grilled squid and conger eel.

No doubt. It has a clear sweet taste. I paired it with sashimi, but it didn't get in the way, and it can be drunk easily on its own.
When I drank it again, I realized that it is a sake with a nice sharpness.

The muddiness was mixed from the beginning.
It smelled like cheese. It has a strong umami flavor, yet is still light and tasty. It is good on its own, and the sweetness increases dramatically when paired with oysters. It also has a slightly fizzy taste, making it perfect for the first drink!
