I've heard a lot about Kido, but I've never had it before. It was a gift from a friend. I don't often pick up Junmai Daiginjo myself, so it was the first time in a long time that I felt the gorgeousness of the sake spreading all over. It was sweet, so it went well with Amaebi (shrimp) and Botanebi (prawn) sashimi. The aroma was a mild but mellow fruitiness. The sweet aroma of rice can probably be felt as well. When you take a sip, you will find that it has a clean and refreshing taste like a fresh water stream with no useless parts. It has a crisp acidity and an overflowing flavor that does not overshadow the strong acidity. It has an elegant texture that glides across the palate. The aftertaste is accompanied by a slight bitterness and fades away, leaving a gentle afterimage. The same Muryosan Junmai Ginjo won the top prize "Champion Salmon" at the 2020 IWC (International Wine Challenge). In this junmai daiginjo, you can feel the taste of the "best sake in Japan" that Heiwa Shuzo has been pursuing, and the taste of the "best sake in the world" that the world has recognized. I'm not sure why I forgot to take a picture of the individual bottle, but it was my personal favorite out of the many Manjusen I received. The tortoise is not a 🐢 tortoise but a 瓷 tortoise which is used to make Shaoxing wine. It seems that the brewing process is done using turtles imported from China. The flat shape of the tortoise makes it look unappetizing, but for me, who wants to enjoy it with rice, this tortoise, which has a strong flavor but not too strong an aroma, was a perfect match. I found out later that it has more koji than other Manjusen. Maybe that's also why I liked it so much. I was wondering if I should buy it at the end, but I already had a bottle of Katsucoma and three other bottles in my bag, so I gave up.

When I had it with sashimi, it was too sweet and I didn't want to drink it at all. I thought it was only an aperitif, but when I had the homemade venison ham from the owner of an old house Airbnb, I thought it might be a good match and drank it with it. Purchased at sake merchant Tajiri Honten. We had it with sashimi purchased in Toyama City at an old Airbnb in Nanto City. The sharpness, crisp acidity and rice aroma are impressive.

Purchased at sake dealer Tajiri Honten in Toyama City. After having dinner at River Retreat Garakku, we had a drink in our room. It had a crisp yet soft sourness and sweetness, and I thought it might be a good match for the milk gelato I was given.
