The sake has been submerged at the bottom of the sea since 2023 to mature....
It is slightly amber in color and does not have much of a ginjo aroma.
When you put it in your mouth, you feel the aroma and mildness peculiar to matured sake, but soon the peculiar astringency and bitterness spread. The single rating is 3 stars😅.
It is better to drink it as a food sake when you have leftover food such as today's appetizers, bamboo shoots stew and mozuku vinegar in your mouth, than to drink it alone.

I've met Hiyoroshi 2023 with the same specifications, but I decided to post this because I feel new when people say 2025ver 😅.

A subtle ginjo aroma, well-balanced acidity and bitterness in the mouth, sharp and dry 😋The origin of Shichikanma is... named after Symbol Rudolf (7 G1 winners) and the connection between Symbol Farm and the brewery😃.
This is the first time I learned about the origin of the Seven Crown Horses brand 🧐.
Looking at the label again, it looked like the U shape of the horse's hoof in the shape of a seven-square 🥰.

It used to be named [Yugami Masamune], but was renamed [Shichikanma] in 1991.
The brewery's president's sister married the owner of Symbol Rudolf (1986), and they decided to create a sake called "Shichikanba" (Seven Crown Horse)... and so the name was changed from "Yiage Masamune" to "Shichikanba" (in 1996) and put on sale.

The master told us that the lid flew off like a sparkling wine when the bottle was opened. Today, the lid did not fly off because it has been a little while since the bottle was opened😅.
Tonight's sashimi platter is seared swordfish with lemon salt, kampachi, kanpachi, kinmedai, salmon, and red clam fins 😋.
The aroma is faintly reminiscent of pear or lychee.
It leaves a slight carbonation on the palate and is a mild, slightly sweet sake 🤗.

I had encountered junmai ginjos made with Sake Mirai in 2020, but this was my first encounter with a junmai daiginjo made with Sake Mirai 🤗.
The aroma is fruity like pineapple🍍, and on the palate, there is just a slight stimulation on the tongue, followed by a delicious, mellow umami flavor.

There is almost no aroma, but when you put it in your mouth, you can feel a slight tingling and shuffling sensation on your tongue.
It is a slightly dry sake with a soft umami flavor and a refreshing taste.
Today, we ordered Senpo-shi oysters, which happened to be in stock.
I think this sake smoothly envelops the rich oyster flavor, and after spreading the mellow oyster aroma in the mouth, it erases it.
