Sasano Shirabe [Harusasa] ⭐️⭐️⭐️⭐️ Junmai Ginjyo Nama Shu light nigori Rice polishing ratio 60%, ALC 14 degrees Water used: Omotanzawa subsoil water For the fourth time, we chose a set of three different Shirasasatsuzumi series from the Kanai Sake Brewery in Hadano City, Kanagawa Prefecture. So far, I've had nearly 3 gou of each sake in the 3 drink comparisons 🤭. I was about to exceed my limit at this rate, so I asked for another half portion of each of the remaining six 😅. I don't really feel the ginjo aroma. It is light nigori, but I think it is a crisp and slightly dry sake 🥰. Chigasaki Chirori: 20240423

Hayaseura Seasonal Ginjo-shu ⭐️⭐️⭐️⭐️ Honjozo Aruze Polishing ratio 50%, ALC 17%. The third comparison is Hayaseura, Yonezuru, and Take-no-en. I have a weakness for "limited edition" sake, so I chose this one without any hesitation 😅. I wonder if it's an orikarami or a cloudy sake😅It's a cloudy white sake, but it's light and you can feel the deliciousness of rice 😋. Chigasaki Chirori: 20240423

Junmai Ginjyo Nama Sake Kasumishu⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 14%. It is a refreshing sweet sake with a carbonation sensation and a stimulating orikarami-style taste. First visit to Chirori in about a month😅. Tonight's sashimi platter includes Koshiyoudai, bonito, seared Spanish mackerel, seared Tachio fish, and sea robin 🤗. We were greeted with many new faces of sake, so we decided to have them all in a comparison set 😋. The first set of drinks included Modern Sentori, Haneya, and Wakanami. Seafood Light Nigori Polishing ratio 70%, ALC 13% (undiluted) The name "fukucho.jp" was written under the manufacturer on the label. It was the brewery that produces [fukucho]. It is a low-alcohol sake with a very strong acidity and a sharp, light, cloudy taste. It seems to go well with grilled fish, fried fish, simmered dishes, and other dishes with strong flavors 😋. 100% Watabune produced in Ryuo-cho, Shiga Prefecture (no pesticides during the growing season) Rice polishing ratio 65%, ALC 15 Yeast used: No additives (kurazakutei yeast) Sake degree: ±0 Acidity: 1.5 A slightly dry sake with a peculiar bitter taste in the mouth 😅. I wonder if this taste is characteristic of the rice ferry 😓. I gave it 3 stars because I felt it was a little out of my taste. Chigasaki Chirori: 20240217

Sake that travels through the four seasons (Snow Sake Brewery) Arabashiri Junmai Polishing ratio 60%, ALC 16%. Now you have met the four seasons traveling sake (tabi-neko) series of Snow Sake Brewery, spring (cherry blossoms🌸), summer (fireworks🎇), autumn (ears of rice🌾), winter (Snow Sake Brewery☃️) labels🤗🥰. As usual, I've started counting the new sake I've encountered and I'm now down to 2,000 varieties, with only 2 more to go 😊. I'm about to open the sake I bought for the new year 🤗🥰 I'm a sake-drinking old man having a party by myself😅. The sake had a clean aroma, slightly dry on the palate, a good balance of sourness and bitterness, and rice flavor and umami. Chigasaki Chirori: 20240119
