A bottle of Tenmei's Rum-chan. The pairing has been waiting but not announced, so I open the bottle. There is a hint of vanilla-like sweetness. Not too sweet...but sweet. There is a roundness to the flavor. It has a rich aftertaste. I've never had so much kijo sake, but I didn't know it could taste like this. But the pairing...am I missing something? I don't think it's on the instagram...

A gem from Kutouryuu. I didn't know they had such a reasonably priced product. Before being heated, it has a strong melon aroma. When heated, the harshness is removed and the melon aroma is replaced by a gentle melon flavor. The taste is...too good. The taste is...too delicious. Uli-like sweetness and umami. The aftertaste is refreshing. Very good heated sake.

Junmai Ginjo from Toyobai. The aroma is like ripe apples. Sweetness and acidity just like apples. From there, there is a strong astringency and alcohol taste. It has an apple-like taste, but the aftertaste is so strong that it is not dull. Even though there is a cold wave, I want to drink cold sake anyway.

We had a special Honjozo of Amano with warmed sake. Oh, it has a nice flavor with a low sweetness. The aftertaste is nice and clean, not sticky. The slight sweetness is also to my liking. Takahara Shoten had a lot of good brands for heating sake. I had a hard time deciding which one to try, but in the end I settled on Tensei, but I'm sure I'll have a hard time deciding next time, too.

Hiraccio, thank you for your comment. I drank too much of Fudoro because it was so delicious. I learned about Takahara Shoten last summer, and they have been a great help to me.

First brand name Yoshida Kurau. there is a rice called Ishikawamon. Slightly cemedine-like aroma. It has a bubbly, fresh and crisp feeling. There is a refreshing acidity and a melon-like sweetness in the depths when you taste it carefully.

Junmai Ginjo made with KENKON Ichi's food rice, Sasanishiki. I vaguely recall reading somewhere that Sasanishiki was a brand of food rice that was twin-perfect with Koshihikari, but it was susceptible to diseases and external environmental influences, and was difficult to grow, so it went into obscurity. However, this junmai ginjo has a pineapple-like fruity aroma that is as good as the sake rice. When you put it in your mouth, you may think it is sweet for a moment, but it soon turns sour. However, the sourness and astringency soon spread to the palate, creating an interesting flavor development.

Nigori (nigori) of Toyobai. It is a very hard ooze. It is mixed slowly from the beginning. The opening went well. It has a fresh lactobacillus-type aroma. It is dry. The ooze is so thick that it can be felt on the tongue. It has a strong fizziness. Not too sweet, but not without sweetness, very elegant.

Tenmei no Nakadori Ichi-go. The aroma is mild and moderate. The ooze is large. The mouthfeel is quite light. The sweetness is almost imperceptible. The mouthfeel is light, but because it is an unfiltered, unfiltered, raw sake and is orikara-mi, it leaves a solid impression. The Ichi-go is also delicious. It tastes better than last year.

Tonight's partner of the evening is Mutsu Hachisen's new sake special junmai. The aroma is so-called cemedine type. It is also strong. I had the impression that the ori was not that precipitated, but when I mixed it, it turned a nice cloudy white. The attack is strong and acidic, with a melon-like aroma and flavor that spreads. The aroma is a bit floral, which I am not a fan of. I wonder if this is an off-flavor? I think there was a theory that cemedines were off-flavors to begin with. It's hard to get a whiff of this scent. Oh, I haven't watched "Partners" yet...I'll watch it, I'll watch it.

Houou Mita, the first brand of the royal road. Ah, lychee. A certain lychee aroma. It has a fruity taste and is relatively inexpensive despite its high specifications. No wonder it is famous. Kangiku's autumn sake. Modest pineapple aroma. The flavor is strong but quite refreshing. The fizziness is just right. It is an autumn sake, but as the concept suggests, it is more of an autumnal sake for special occasions than a seasonal sake.

My partner's partner tonight is Tenmei's Nakadori Zero, which I ended up buying again this year. Will I go up to corporal again this season? It's a question I have to ask myself. This fall we had the good fortune to be able to enjoy the new Mizuho Koganei rice, and it was wonderfully delicious. As for the sake...it too is delicious. It has a grapefruit-like aroma and a fruity taste with a combination of acidity, umami, and sweetness. Mizuho Koganei is delicious to eat and delicious as sake...but that is an overestimation of the rice alone. I am grateful for the brewer's thoughts and the skill to give shape to them. It looks like it will go all the way to the corporal.

It's been a long time since I've had a bakelan. I went to buy akabaku and after much agonizing, I bought the rainbow color. Does it smell like muscat or pineapple? Is it super dry? No, no. The sweetness and umami spread out and then it suddenly snapped. The preceding umami sweetness is not so common in akabaku. I wonder what the liquor stores that are making fun of Aruzoe are trying to do? It's so delicious...

Tenmei's first autumn harvest. Autumn harvest in its purest form. The aroma is slightly reminiscent of apples. The acidity, umami, and sweetness are well developed and very tasty. Compared to when it was only Miyamanishiki, it has become really easy to drink. It is a wonderful bottle. After drinking it last year, it has become an indispensable autumn sake.

My first, and for several years my love affair with Tianqing. It is also my favorite autumn sake. And it's an orikarami. A clean rice aroma. Contrary to my expectations, it is a solid sake. This was a pleasant miscalculation. Although it has a strong alcohol taste, it has a sweet sake-like atmosphere, making it the perfect sake for the fall season. I would definitely like to repeat this after the weather turns a little more autumn-like. But even in Kanagawa, the atmosphere is different between the mountains and the sea. Is it any wonder?
