AQE's Hato Masamune is a joint project of four breweries in Aomori. This is the first time I have had it. It has a refreshing aroma of rice. I wondered if my stupid tongue would be able to tell the difference if the same rice was brewed with the same yeast at the same rice polishing ratio.
The taste is...a strong sweetness on the attack, and the umami of the rice comes out well, as is typical of junmai. The astringency of the finish is also strong, but overall it is not too heavy and can be enjoyed as a stand-alone sake. Of course, it goes perfectly with rice and other dishes that go well with rice. When drinking it on its own, you can also taste a nutty flavor.
