This is a wonderful sake that combines the rich flavor of Omachi with a refined elegance. The high quality that is typical of Erima shines through in the finish, and every sip is a delicious experience.
Fruity on the palate. The moderate acidity and the alcohol taste through the nose are pleasant. After a few days after opening the bottle, the acidity and alcohol settle down and the taste changes to an easy-drinking, mild flavor.
Delicate flavor and unique acidity. One sip and you are reminded that this is Niimasa.
While I feel that there are more and more delicious sake on the market, I have come to realize that they are all somewhat uniform in taste, and that they all taste alike, but Shinsei has a strong sense of individuality.
It has a juicy, rich flavor with a strong umami (umami is the Japanese word for "nigori" in Japanese). However, it also has a moderate acidity (with a bit of character) and is not cloying.
