On the 13th day after opening, we had a drink at the freshly opened izakaya Yamabuki. For some reason, the restaurant sells only one cup of sake, even though it is a Kagoshima restaurant! The cup has a picture of a snowman on it! It is said to be derived from a story in the Hokuetsu Yukifu. The lid of the cup is opened with a snap! They don't usually do this in the store, so it's exciting 😃. Well, the aroma doesn't stand up. The mouthfeel is sharp and easy to drink as it doesn't have much acidity seems to go well with any kind of food It's delicious! It is a restaurant in Yuda Onsen, Yamaguchi-shi

I was drawn to the cool bottle because it was so damn hot, so I bought it. The aroma is sweet with a hint of grape. At 7 degrees Celsius, it drinks like water. At 12 degrees, it has a refreshing taste with a hint of acidity. When the temperature rises a little more, it has a slight citrus flavor. I read the label on the back of the bottle, and it says that 40% of "Soumei", a type of malted rice that produces citric acid, is used for summer use.

A bottle purchased on a trip to Saga Aroma like old sake, like rice bran - then mineral aroma Soft sweetness without acidity and a round mouthfeel. A hint of vanilla in the nose I think this would be even better if it were heated up. But even though it's air-conditioned, it's still hot in the middle of summer. The website says "lukewarm or hot heating is recommended"! I had no choice but to drink it. ❗️ I drink it with a sake cup that my eldest son gave me! Sake temperature: 45 degrees. The fermentation smell is gone and the aroma is not strong. In the mouth, the soft sweetness is still there, but the thickness has increased and there is not much acidity. The sweetness slowly lingers on the tongue. This is delicious. ❗️ I want to drink it slowly without snacks on a long autumn night!

Purchased during a trip to Saga Slight aroma of shiso. When you put it in your mouth, it smells like whipped cream. The mouthfeel is thick and soft with a rather strong sweetness. As the temperature of the sake rises, the creaminess may increase. It is said to be made with strawberry yeast, but I did not detect any strawberry aroma. There was a bottle of Amabuki's sake lined up in the fridge at the liquor store, but I had too much fun the day before, so I gave up buying it! What a pity!

As usual, a nice sound when I uncork the bottle. Is it longer than usual? Expectations are high for the carbonation. The aroma is fresh and lychee-like, followed by a sweet aroma. The mouthfeel is gassy, with a hint of milk-like sweetness after the pear juice-like flavor. There is not much of a lingering aftertaste and it seems to disappear quickly. Oh, it's delicious!

When you twist the stopper, you can hear a long gas puffing sound. After a faint pear-like aroma, there is a tea-like aroma, and when you take a sip, you feel sweetness, followed by sourness and a hint of bitterness. The sourness slowly fades away. Most of Nakashimaya's labels have the name of the product in big letters, but it is strange that they have a summer label on the top 😂.

I bought this bottle on the way back from a mountain marathon. It's a ginjo, but the aroma isn't that long. It has a fructose or honey-like aroma, with a slight mineral note coming in later. In the mouth, there is a subtle hint of old sake, but it's good because it's like a hidden flavor. The mouthfeel is soft sweetness, citrus acidity, and a little bitterness. The taste is quite complex. It is the kind of sake you want to drink slowly at night.

The one I bought at the brewery on a trip to Hita and laid in the fridge. Sake temperature 12 degrees Celsius Slight aroma of banana. The mouthfeel is refreshing. It has a clean aftertaste without leaving much residue. Very easy to drink The label on the bottle looks like a souvenir from the old days - I wanted to warm it up, so I warmed it up to lukewarm. Sourness comes out and lingers on the finish, but it's still refreshing - not too sweet, but not too dry - this is good! Perfect for an evening drink! And then, heated to 30 degrees Hyuga Very smooth and easy to drink! This is good, but it's lukewarm, so it will cool down if you don't drink it fast - but it was still good 😃.

Purchased on the way home from a full marathon in the mountains, battered and bruised. It had been out of the fridge for a little while, so the sake temperature was about 13 degrees C. That's why the sweet ginjo aroma is complex, with hints of milk and cedar. The mouthfeel is thick and sweet, but the unique chirichiri-ness of nama-zake makes the sweetness combine well with the sweetness and the sweetness feels just right. Shintani's Wakamusume is one of my favorite brands!

A small brewery in the middle of the industrial city of Shunan! The aroma of apples hides a sweet dairy aroma. The mouthfeel is soft, but the acidity is strong. I wonder if the bitterness is accentuated by the sourness. And the sourness is rather lingering. I guess it's because of the low alcohol content of 14 degrees. Tomorrow is a full marathon in the mountains and I'm still drinking... I have to stop. ❗️

When I was young, I remember buying a bottle of this brand, but I don't know the brand name, and it was delicious. It has a sweet aroma like a pure sake, and a banana-like aroma mixed with various other aromas, like mixed juice! The aroma makes you think it's thick and juicy, but it's surprisingly refreshing. It has a citrusy taste - it leaves a sour taste, but it's not bad. As the sake temperature rises to around 13 degrees Celsius, the chili flavor becomes stronger and more enjoyable 😊. Tao's Moon reminds me of Keita Amemiya's biographical action film, although I don't have any context for it.

I like it, but there are no stores that carry it in our prefecture: ❗️ So I haven't had it for a while, but I bought it when I visited the discharge of the Onomi Dam in Hiroshima Prefecture. The aroma is mild, with a sweet ginjo aroma and a hint of vanilla in the background. The mouthfeel is soft and a little thick. It is easy to drink. Miho is the same name as the toji (master brewer) and president of the company, but the name of the sake is "biho". No wonder it has been a long seller for 30 years!

A bottle bought at the brewery Please drink it well chilled. Not because it says so, but because the sake temperature is 9 degrees Celsius. The aroma is not strong but fresh like young grass. There is a slight nutty aroma on the palate. The mouthfeel is light, with a citrus-like acidity that spreads but is not strong. The lingering acidity lingers for quite a while, which is also good. Mr. Yamaoka's main taste is sake that has been aged for a long time. How about a low-alcohol sake (❗️), so I bought it! Well, this one is good, too! I bought 300 bottles to save money, but I should have bought a four-pack! I finished it in no time!

Purchased at a brewery in Hita City Sake temperature is about 9 degrees Celsius. Almost no aroma. Slightly milky and buttery aroma in the mouth The mouthfeel is soft and easy to drink. As the sake temperature rises, it becomes crisp and refreshing. It is an easy drinking sake. A little more aroma would be nice.

The last Zuikan is in the process of aging. but it's brewed in 2023, so it's been sitting for 2 years. Sake temperature is about 10 degrees Celsius. The aroma is not strong. Maybe a hint of milkiness. It's a bit milky. The mouthfeel is refreshing. But it is not as rounded as the 5 year old, and this one has more sharpness. Anyway, it is easy to drink, and since it has no sourness or old sake-like aroma, it can be paired with many different kinds of food. Of course, it is also delicious on its own.

On our way to visit the dam, we stopped by Yamaoka Sake Brewery! There were many kinds of sake in the fridge, so I asked the brewery staff about their standard sake, and they recommended this brand! He said it is often served at izakayas (Japanese-style pubs) in Fukuyama City! Yamaoka's sake is often aged, and this one was also aged for 3 years! Sake temperature is 9 degrees Celsius. The aroma is like that of old sake, followed by a spicy aroma. The mouthfeel is refreshing but soft, with no aftertaste - it has a sharpness to it. As it is a super dry sake, I thought it might have acidity, but I didn't feel it. It is very easy to drink. At room temperature (20 degrees Celsius), some acidity remains, but not too much. It's delicious! Let's try heating it up next time! According to the brewer, it goes well with Western and Chinese dishes with strong flavors. I guess that's exactly the flavor of sake that has been aged for a while, similar to that of Shaoxing sake! I picked a lot of bamboo shoots, so let's try it with Chinese stir-fry with green pepper 😁.

A bottle of winter hanpukai The aroma is not so long. A faintly sweet aroma? It is soft on the palate. The bitterness remains a little, but I think the bitterness makes it more refreshing. The description says to drink it at room temperature or chilled, but I was tempted to warm it up, so I warmed it up lukewarm. It's not bitter, but it's softer and tastes great! This is the kind of sake that you can drink every night without getting tired of it!

Purchased at Tenmanya Store when I drove my college student son to Okayama Soft and fluffy vanilla aroma Not as strong an aroma as one might expect from an aromatic sake. Mouthfeel is refreshing. Slightly bitter taste, but not bad. My impression is that it is an easy-drinking junmai-shu with few habits. Seems to go well with all kinds of food.

I bought this bottle after visiting the brewery on a trip to Hita. Sake temperature 6 degrees C. Slight aroma of melon, clean mouthfeel, no acidity or sugar residue on the finish. At 10 degrees Celsius, the aroma changes from melon to a sweet aroma that is typical of the original sake. The mouthfeel is still clear, but soft, and the warmed sake is easy to drink, but there is a subtle hint of glue in the aroma. I wouldn't recommend heating it up. It's easy to drink cold, so I think it will be gone soon. Well, it's 300 bottles, so I finished it...
