さけざんI bought this bottle on the way back from a mountain marathon.
It's a ginjo, but the aroma isn't that long.
It has a fructose or honey-like aroma, with a slight mineral note coming in later.
In the mouth, there is a subtle hint of old sake, but it's good because it's like a hidden flavor.
The mouthfeel is soft sweetness, citrus acidity, and a little bitterness.
The taste is quite complex.
It is the kind of sake you want to drink slowly at night. さけざんPurchased on the way home from a full marathon in the mountains, battered and bruised.
It had been out of the fridge for a little while, so the sake temperature was about 13 degrees C. That's why the sweet ginjo aroma is complex, with hints of milk and cedar.
The mouthfeel is thick and sweet, but the unique chirichiri-ness of nama-zake makes the sweetness combine well with the sweetness and the sweetness feels just right.

The aroma is a combination of pear and banana, with a hint of grain, which is common in orizake, but it is not sticky.
The mouthfeel is soft and thick without much acidity, and soon after, a carbonic acidity is felt.
I have never tasted anything like it.
