On our way to visit the dam, we stopped by Yamaoka Sake Brewery!
There were many kinds of sake in the fridge, so I asked the brewery staff about their standard sake, and they recommended this brand!
He said it is often served at izakayas (Japanese-style pubs) in Fukuyama City!
Yamaoka's sake is often aged, and this one was also aged for 3 years!
Sake temperature is 9 degrees Celsius. The aroma is like that of old sake, followed by a spicy aroma.
The mouthfeel is refreshing but soft, with no aftertaste - it has a sharpness to it.
As it is a super dry sake, I thought it might have acidity, but I didn't feel it. It is very easy to drink.
At room temperature (20 degrees Celsius), some acidity remains, but not too much.
It's delicious!
Let's try heating it up next time!
According to the brewer, it goes well with Western and Chinese dishes with strong flavors.
I guess that's exactly the flavor of sake that has been aged for a while, similar to that of Shaoxing sake!
I picked a lot of bamboo shoots, so let's try it with Chinese stir-fry with green pepper 😁.
