The setting is the same as the Yamawa style we drank the other day. The aroma is stronger. The mouthfeel is light, with a strong flavor characteristic of the traditional umami type, and the taste lingers for a long time. The aroma is not so strong in the mouth. It is totally different from Yamawa. Both are good, and both are just a matter of taste, but personally, I prefer this one.

It has a refreshing aroma that is typical of sake, and when you put it in your mouth, you will feel a light viscosity, while the so-called "Hagi no Dew-like" umami, sweetness, and acidity will spread on your palate. The perfection of this sake is so great that it is hard to believe that it is an "etude," or a practice sake.

The 2018 sake was bottled in 2022 and shipped in 2023. It has 18% alcohol, so it is powerful. The aroma is not that great, but smells slightly like raw rice and dead wood. The sip is powerful and full-bodied. There is no pronounced sweetness, acidity, or bitterness. There is no sense of viscosity. When finished, there is a slight aftertaste of alcohol, but the taste quickly disappears.

Strong, 45% polished rice sake (but is this a Junmai Daiginjo?). The aroma is rice-like, like Benten Musume. The mouthfeel is tangy, with no viscosity. On the tip of the tongue, there is not much taste, just a tangy sensation, but when it reaches the mid-palate, the umami comes out quickly and disappears as it passes down the throat. It is full of wildness, but it is an excellent sake.

It is served cold and warmed (about 40 degrees Celsius). When cold, it has little aroma and is light on the palate. But after two seconds, a strong umami flavor spreads in the mouth. When it passes the throat, the aroma is released from the nose. When heated, the aroma is more pronounced and the mouthfeel is slightly viscous. The acidity and umami are enhanced, making it a much better sake.

Sake made with rice from Yamada Nishiki Kyoseikai. Purchased at Ichiishiya Sake Shop. The aroma is adequate. The mouthfeel is a bit viscous. In the mouth, umami spreads, but at the same time acidity comes in and closes the taste. An incredibly well-balanced sake.

Sake from Bungo-Ono, Oita, given to me by a junior colleague. It is brewed with rice called Oita Mitsui. The aroma is very gorgeous. The mouthfeel is slightly viscous. The richness of the first sip rushes in, and the umami spreads quickly in the mouth. Two seconds later, it expands a little more and gradually fades away leaving a lingering taste. I think this may be the first time I have had a sake with such a strong first sip impact. It was delicious.

Lightly fruity aroma. The mouthfeel is light, but you first taste a refreshing melon-like sweetness, which, along with a slight sourness, clenches in the throat. The low alcohol content (15%) for a pure sake makes it easy to drink. It was a good sake. Buy it at Izumiya

Furusato Regular Tax Delivery Service. Sake brewed with Koshihikari. The aroma itself is mild. Slightly viscous on the palate. The deep umami from the light acidity continues until the end of drinking. There is no bitterness. It has sweetness, but it is not harsh, so you can drink it smoothly. It is hard to believe that it is Koshihikari.

A birthday gift from a colleague at the office. The aroma is mild, but light apple and melon-like. Light on the palate. Refreshing sweetness and sourness on the tip of the tongue. When you take more of it into your mouth, you can taste the rich melon aroma from the nostrils and the richness of the flavor. The taste quickly clears up with a light bitterness in the throat, but a slight numbness of the tongue due to the alcohol remains. It is delicious, but the flavor is fresh and light.

A sake brewery that I came to know through my teacher. A hybrid of Miyamanishiki and Hitogokochi. The aroma is like melon soda. On the palate, there is a slight viscosity, but it is not sticky due to the sizzling sensation. The first sip has a fruity flavor and acidity like apple or pineapple. Although it has a strong flavor, the taste disappears softly after it goes down your throat. I like it better than Shinshu Kamerei.

Stored at room temperature. When opened, it was young and not to my liking. After about a week, it was delicious. The aroma is typical of conventional sake. It is light on the palate. When you take a sip, it flows smoothly on the tip of the tongue, and the umami and light acidity spread in the middle of the tongue. The taste disappears with a slight bitterness in the middle of the throat. It was a good sake.

The aroma from the glass is subdued. As soon as you take a sip, you feel a light stimulation on the tip of your tongue, and the umami and light acidity spread across your entire mouth between your tongue and upper jaw. As you finish the bottle, the nose releases a sake-like aroma. As you take more sips, the taste of rice bursts in your mouth.

A faint scent of flowers. When I sniffed it out to see what it smelled like, I found a slight sake-like aroma. The mouthfeel is smooth. The taste is sweet and sour like calpis from the moment it enters the mouth until the end. It tastes more like something between amazake and calpis than sake. Alcohol 10%.

The aroma is subdued, but has a hint of junmai-shu. The mouthfeel is light. The taste is watery on the tip of the tongue, but the umami is felt in the middle of the tongue, and after passing through the throat, the lingering taste of rice can be felt for a few seconds around the upper jaw, and then it gradually disappears.

I drank it the day after it was squeezed. The aroma is not so strong, and the characteristic shwashiness of nama-zake is moderate. In the mouth, the sake has a light feel, and the acidity and sake-like umami come out softly. Just before swallowing, the flavor fades away, leaving a slight aftertaste while the aroma emerges.

Even though it is a fire-aged sake, it has the freshness of a fresh sake. It is not viscous and has an apple-like fruitiness on the palate. Just before it goes down the throat, there is a momentary bitterness followed by a lingering taste.
