When I visited the Skytree Solamachi, the brewer of Ichinokura came to sell this special sake, and I was allowed to taste it. The green bottles of Suzune that you can find in supermarkets are carbonated afterwards, but this one is fermented and slightly sparkling. Moreover, it is fire-aged and can be served at room temperature, so I had it while I was on the road. It's not so much slightly fizzy as it is fizzy, with a citrusy and sour taste reminiscent of lemon and a very refreshing aftertaste. 9% is very easy to drink. It is delicious! This is the kind of encounter I'm looking for.

Abe The second in the series, this time it is Noda, a field-by-field project. There are other rice fields in the series, such as Kamiwashinden and Akada, and this one was given to us as it is said to be one of the most highly rated rice fields in the series. It is surprisingly clear and refreshing, with a hint of sweetness and a slight fizz, and is very tasty!

This sake is made by a female toji. It was recommended to us at our usual restaurant. It is golden in color, a bit thick, and served cold. It is very tasty with the flavor of rice spreading through it. It is perfect for the autumn taste!

We met at our usual liquor store. This is my first time drinking this sake. I was lured to buy it by a pop-up that said it had a sour taste like a lemon. It has a slight carbonation and an aroma rather than a sourness like lemon, and the sweetness is moderate and refreshing. I was impressed by the wide range of sake, and was surprised that there is such a sake that I have never had before.

It is the first new positive in a long time. Moreover, this is my first "Nilgame". Unlike the image of Shinsei so far, it has a moderate acidity, no fizz, and an elegant sweetness that is very appealing. It tastes like a dessert. It is a pop-up purchase at the usual store. This is what they call Akita sake. I am a Tohoku person, so this is perfect for me. It has a great rice flavor, yet it is soooo refreshing and easy to drink and goes great with food! It is very easy to drink and goes well with meals! Delicious!

It has been a long time since I have had Sentori. I drank this once before. It is a nigori sake. I opened the bottle slowly and was able to open it without it spurting out. When I poured it slowly to prevent the lees from getting into the bottle, I found that even though it is nigorizake, it has such a strong effervescence that it could be mistaken for cider, and it is very clear, refreshing, and delicious. I would definitely buy it again if I come across it again.

This is from a brewery that is currently recovering from last year's Noto earthquake. This is one of the ways to support the recovery. As a choice different from my usual preference, I chose a dry order that would go well with a meal. It is dry, but it is also fresh and goes well with a meal.

It has been a while since I had lunch at an Italian restaurant run by the Kumazawa Sake Brewery, and this is the sake I got. I was curious about this sake because I saw a sign in a rice field along my jogging course that read "Sake Rice Project. This sake is made from Omachi rice grown in the fields of Fujisawa City, Kanagawa Prefecture, Kumazawa Sake Brewery's hometown. The taste is clean, with a sense of the deliciousness of rice!
