All of the "Yamada-Nishiki" sake rice, which has been lavishly polished to 50% of the unpolished rice, is used to brew this sake slowly at a low temperature. This gorgeous and crisp Junmai Daiginjo-shu is bottled "unadulterated" without heat treatment or addition of water.
