They have collected Ni-Rabbit's raw sake and packed it in barrels.
Each lineup of Nitoshi is distinctive and delicious, but this assemblage is also quite interesting.
There is almost no barrel aroma, perhaps because it was drunk so late, but it is nice.

It has a strong acidity. However, it is not so bad when you drink it.

I thought about having a beer on the bullet train, but it was cold and felt a little different. I went with this low alcohol 9% fizzy one.
Even at this low alcohol level, it is full-bodied and tasty.

It is a Yamada Nishiki 18, which is a blast.
It is water. Really crystal clear.
Of course, I like sake with a lot of miscellaneous flavors and taste.
But this is wonderful.
It's very expensive, though, so I can't buy it.

An interesting sake made with Koshihikari rice and wine yeast.
Polishing ratio of 90%, the same as white rice, and alcohol content of 12%.
It is milky and the rice is sweet.
