Polishing ratio: 50% Japanese Yamashita Nishiki Japanese sake degree +4.0 Alcohol content 16%. When I sipped it, I felt a more complex aroma, not the ethyl caproate like apples that I imagine from daiginjo-style sake. It was sweeter than the sake's sake level, but it was crisp and refreshing after drinking, which is strange.

Junmai Daiginjo 100% Sakahomare, new sake rice certified by Fukui Prefecture Fukui Prefecture's latest ginjo yeast FK-802 Ono City's famous water "Oshimizu Sakahomare is a new sake rice developed by Fukui Prefecture in 2010 by crossing Yamadanishiki with Koshinoshizuku, a variety bred and registered by JA Teraru Echizen. In the mouth, one first senses sweetness and fruity acidity, followed by a mellow and gorgeous aroma as one swallows. It tasted like rice juice to me! The sake was like the personality of the brewer, whom we spoke with briefly when we purchased it.

I traveled to Ono City, Fukui Prefecture, and had a chance to talk with the brewer at his store and sample various types of sake. Since I was far away, I bought this one, which can be bought at room temperature and is only available here. Junmai Genshu (pure rice sake) Rice polishing ratio: 60 Alcohol content: 18%. Sake that is a little strong with a sense of rice. Deep and dark flavor that would go well with meat dishes. However, it may be served with sashimi or other dishes by adding ice to dilute it a little. I felt this sake was carefully made.

The sake that came out when I asked the shopkeeper to tell me what kind of sake has the so-called "cemedine smell" type of aroma. The aroma that passes through the nose does indeed have a faint cemedine-type aroma. The taste is deep, and as you swallow it, you can taste the rice flavor, which is wonderful. SENKYO NATURES is made using an ultra-ancient method, with no added yeast (kuraitake yeast), brewed in wooden vats, and made with a raw sake mother, using ancient rice (kame-no-o) and rice that is not polished.

This company was established in 1944 as a joint venture of 21 breweries and 8 factories in Kita-Akita and Kazuno counties under the government's corporate development program, and is located in the northern part of the prefecture and in the southern part of Kazuno County.

Place of Origin : Shiga Prefecture, Sho Shiki Shuzo It seems to have been made by adding sake instead of water during the three-stage brewing process. Taste the rich sweetness, then add one ice cubes, and taste more curry ingredients? A pinch of garam masala! Wonderful taste!

Junmai Tamakae Freshly pressed raw sake Polishing ratio 60%, alcohol 16%. 100% Tamakae produced in Shiga Prefecture Freshly pressed sake only during the brewing season. Sake with a sharp, yet mellow, aroma and full of flavor freshly pressed. Shichibonshari became my favorite after traveling in Shiga Prefecture. Found it at an antenna store and bought it.

For the first time, I tasted at the same time unfiltered raw sake (18% alcohol by volume) and filtered and watered sake (15% alcohol by volume), both of which were originally the same sake. I was surprised at the difference in aroma and taste. The gusty taste has changed to a soft, mellow, gentle taste.
