It's that time of year when summer-only sake is in full swing. I was torn between the brands I had already decided to buy. I bought a bottle of Mr. Summertime by Kanbai Sake Brewery in a hurry. (Even though I haven't had the standard Miyakanme yet.) I heard that the brewery is holding a circus concert! When I took a sip, I thought it was a little spicy, sharp, and refreshing, but soon the sweetness of the strawberries with a nice sourness and juicy...at the end...whoa...! I was surprised. There was no sweet aftertaste, or rather, no aftertaste. The taste seemed to disappear into thin air. It may be dry, but it's so juicy. It must be a summer sake. My fridge is full of summer sake. Sake is so busy.

I came across this when I stopped by a liquor store to see how hard I've been working lately. This is the first time I've had this slightly more expensive Suitori Ki. It is precious that it is brewed with 100% Aizan. The moment I drank it, I was betrayed. It's amazing 👍🏻 It was so dry that I wondered if it was really Suitoki! It doesn't have that sweetness or fruity taste, it has a peculiar sake smell in a good way. But it was as refreshing as drinking water. My brain was bugged. After two or three sips, the sweetness of the rice shows its face for a moment, but it is soon hidden by the bitterness and continues dry and refreshing until the aftertaste. I would like to pair this with sashimi and sweet boiled or simmered dishes. Tempura is also good. No, it goes well with anything, for sure.

Special. Birthday celebration from my best friend 😊. A limited edition sake from Kaze no Mori. This is Japan's first ambitious work that uses two additional microorganisms than usual to add depth and breadth to the taste and aroma. First impression is fruity and gorgeous, just like No. 7 yeast. The slightly strong microbubbles remind one of a fresh breeze. Perhaps due to the influence of microorganisms? When tasted closely, strawberries and bananas are mixed in, as if one were eating a fruit punch made of soda water. The view of multilayering by microorganisms is suddenly becoming clear. Anyway, it is a refreshing and wonderfully easy-drinking sake. It was a great day to be able to taste it with my best friend who lives far away from me now.

Spring in Yamamoto is an ukiwaki! It seems. I have been drinking Yamamoto series recently, so I was attracted by the name and bought it for the first time♪ It's a slightly fizzy, fruity, and slightly cloudy beer similar to New Year's No. 7 or Pure Black. But since it's a spring float, it's gentle and not that sharp. It is also said to be low in alcohol content at 14 degrees. (The naming has no deep meaning, but it is as beautiful as the image.) The aroma is strawberry-like, and the slight carbonation adds a refreshing and gorgeous flavor. Immediately after, the tongue is clothed in the softness of rice powder. There is not much sharpness, bitterness, or saltiness. The acidity is moderate and the sweetness does not linger, so it can be drunk without hesitation.

This is a light nigori (nigori is a light cloudy rice wine) of Aizu Nakasyo, a standard product of the Tsurunoe Shuzo brewery in Aizu, in spring. (Manufactured in March 2023) I have never been a big fan of nigori sake, but the Aizu Nakasyo suited my palate very well, so I decided to try the nigori. As a result, I was surprised at how delicious it was! There is not much aroma, but as soon as you put it in your mouth, you feel a faint carbonation on your tongue... and the rich sweetness of the rice becomes a delicious flavor. It's not so much a floral flavor, it's just a sweetness that really swells up! In audio terms, it's the mid-range! This sake is like having a juicy dessert. You can smell the aroma of ripe strawberries in the glass after drinking. Tsurunoe Sake Brewery, all their sake are really delicious.

Continuing from the last issue, we had a bottle of Yamamoto Pure Black from the Yamamoto Sake Brewery in Akita, Japan. Pure Black is a surprisingly new brand launched by the 6th generation brewer in 2007. It is a very sharp, slightly sparkling winter limited edition of No. 7! Dry? The moment you think it is, the juiciness that is typical of Yamamoto spreads out, leaving a lingering sweetness. It is said to be citrusy, and while there are hints of strawberry and green apple, the 🍊some bitterness of orange peel also contributes to this. The view is clear, not too complex like Italian perfumes. It's clean!

The well-known winter project of Yamamoto Sake Brewery in Akita, Japan, a comparison of Association No. 6 and No. 7. This time I could only buy No. 7, so I don't know the difference lol. When I first drank it, I was surprised because I didn't know it was slightly sparkling, but I was surprised at how gorgeous it was. I was surprised at how gorgeous it was. I thought this was a good idea, so I had it in a wine glass. If you didn't know it was sparkling wine, you might think it was sparkling wine. At the top, it had an aroma like white grapes and a sweet taste. At the same time, the acidity and sharpness, combined with the slight bubbles, were exquisitely balanced, and the wine was soft and crisp. The last part of the wine is juicy and stays in the mouth for a long time, like after eating muscat or strawberries. At first I had the impression that it was dry, but as the days go by and the acidity fades, the fruity sweetness becomes more pronounced, and this change is also interesting. It is a strange drink that looks like a thin white wine but has the richness of sake. The professional taste of this unlabeled product is very appealing.

Junmai Ginjo Yuri from Tsurunoe Sake Brewery in Aizuwakamatsu, Fukushima Prefecture. It is a collaboration of a mother who is a sake brewing engineer and her daughter who majored in yeast science, and Yuri is her daughter's name. That episode alone is enough to make you want to drink it. The first time I drank it was at the store, and my first impression was of a soft, feminine sake! I happened to get one of the few arrivals this time. It is still a sake like a woman's tenderness. It has a faint sweet aroma like amazake, and when you put it in your mouth, the sourness and sweetness rise softly and then fade away nicely. It leaves a fruity taste like after eating strawberries. The pale blue sake bottle is also beautiful. Everything is not overdone in a good way, it is a nice sake.

Urakasumi, by Saura-san of Shiogama, Miyagi Prefecture, needs no explanation. This is No. 12, which is a revived sake made with Kyokai No. 12 yeast, and I bought it when I found out that only Shinsei No. 6 and this No. 12 are registered with the association in Tohoku. From the aroma, strawberry flavor is already in the air, and once you take a sip, the strawberry flavor follows the sharpness of the aroma, but the sweetness is not too much, and it is very smooth. At the same time, the body is delicate, yet it has a fine macho quality that gives the sake a Urakasumi feel. It is followed by a tangy acidity, a little saltiness, and a dry aftertaste. It is more fruity and daiginjo-like than regular Urakasumi, so I personally prefer to taste it alone rather than during a meal. By the way, the design of 12 on the label is too nice, like a space-time romance.

This sake is from Kinai Sake Brewery, a sake brewery in Ichihasama, Kurihara City, Miyagi Prefecture, famous for Wataya. Unlike Wataya, this sake is junmai (pure rice), but in a good sense, it is quite light. Kosansui" is the name of the spring water they use, and as you can see, the sake is as refreshing as water. The moment you take a sip, the sweetness of the rice and the aroma that wafts into your nose comes one tempo later, as if it were really water. It does not leave much of an aftertaste and makes you want to take another sip right away.

From the moment you take a sip, it is completely different from the usual drunken whale. The acidity and saltiness come to the fore! It's like a fresh sake. It is often described as fresh, but it is just barely safe for my taste. If it tastes even more sake-like than this, I may not be able to continue drinking it. As you continue drinking, you will notice that the sweetness behind the sourness and the crisp aftertaste that quickly fades away are in perfect balance.
