Urakasumi, by Saura-san of Shiogama, Miyagi Prefecture, needs no explanation. This is No. 12, which is a revived sake made with Kyokai No. 12 yeast, and I bought it when I found out that only Shinsei No. 6 and this No. 12 are registered with the association in Tohoku.
From the aroma, strawberry flavor is already in the air, and once you take a sip, the strawberry flavor follows the sharpness of the aroma, but the sweetness is not too much, and it is very smooth. At the same time, the body is delicate, yet it has a fine macho quality that gives the sake a Urakasumi feel. It is followed by a tangy acidity, a little saltiness, and a dry aftertaste.
It is more fruity and daiginjo-like than regular Urakasumi, so I personally prefer to taste it alone rather than during a meal. By the way, the design of 12 on the label is too nice, like a space-time romance.
