Even after thoroughly tasting the 12 bottles selected by Yasubeyes (Hexagon is treated separately), the sake party is not over yet🤣.
Next up was the bouken challenge sake from Yasubeyesan, who wanted to serve sake that Sake-no-wa legend bouken had not yet drunk.
I mean, Yasubeyesan likes bouken too much 🥰.
Junmai Jyoshika Midori
This sake was purchased by Yasubeyesan as part of his assistance at the Japanese Sake Festival. It is beautiful despite its 90% rice polishing ratio, and has a complex sweet and savory taste with an umami aftertaste.

Since I am also a fan of bouken, I decided to launch a petit negative campaign, saying "You guys don't know bouken behind the scenes..." 🤣.

I wanted to try a sake that I have never had before. This sake was prepared under the title of "boken challenge". I'm not sure what it is, but...
Actually, I had already had it at the June Kokusyu Sake Fair😅.
He was very disappointed with my reaction 💦.
The specs are very sharp with 90% rice polishing ratio.
It's also priced very aggressively.
The top aroma is kind of blue, like grass.
It has a unique taste, but the sweetness is quite good.
It tastes just as strange as the impression I had when I drank it at the Kokusyu Sake Fair.
I won't try it again! But I had never tried Sekimusume, which I brought to last year's Sakai Off-line Meeting, so please don't give up and try again 🙏. ヤスベェHello bouken!
I also went to the Kokusyu Sake Fair, but I couldn't find this sake and I believed the staff at the Japanese Sake Festival told me that it was the first one to be opened in Kansai 😀.

Koyama Sake Brewery in Joetsu City
The brewery had decided to close down due to a lack of successors, but Biotech Japan, a manufacturer specializing in plant-based lactic acid bacteria, who was interested in sake production, took over the business and kept it going.
Kakoshika" is a Japanese word meaning "brewer's aroma" in Japanese.
