The brewery had decided to close down due to a lack of successors, but Biotech Japan, a manufacturer specializing in plant-based lactic acid bacteria, who was interested in sake production, took over the business and kept it going.
Kakoshika" is a Japanese word meaning "brewer's aroma" in Japanese.

It's sweet and tasty, but a little peculiar.
It tastes beautiful, but it's hard to believe it's 90% polished rice.
