I forgot to take a picture. I was walking with my junior staff when I saw a sign that said "Jyushiyo available" at an izakaya that I used to frequent. We found a sign saying "Jyushidai available" at an izakaya (Japanese style bar) where we used to frequent and entered immediately. I had the last of the bottle. I was glad that my younger colleague, who is not accustomed to drinking sake, was impressed with it. Yesterday's Jigokin was good, but the Jyushidai was something else again. It is still my unshakeable No. 1. ☝️

GET my first bottle of Jikin 🥺🙌 Beautiful from the moment it is poured into a cup. Slightly effervescent on the palate. It changes a little with the passage of time. It tastes good whether you drink it or not. I'm glad I took a breather because a lot of things were going on. The entrée goes with everything, but here's a reminder. 1) Salad (2) Satisfaction Sushi 4) Hamburger steak with grated Japanese radish 5) Thick Neapolitan (6) Cream puff I thought I might have eaten too much as I recorded the results. Anyway, it goes with everything and is delicious anyway.

[Addendum] 2025/02/15. It has been 3 weeks since the opening of the mouth. To be honest, my impression of the base is that I prefer "1 week after opening the mouth" the best. This year has had many cold days in the past few years and the sake was delicious. Additional note】2025/02/01 After leaving it for a week, it had changed to my highest preference. It was a style of drinking sitting directly on the table, not on a chair, but I kept on drinking and when I came to, I just turned it over and fell asleep. I'm glad I didn't spill my drink. This is a perfect repeat when I find it. ーーー... My first "Sake Mirai". The first sip gives the impression of "clean" and "watery" in one word. After a little time, it becomes creamy. Perfect with tofu in kombu broth 👌👌.

First time in 2 years, hanayo. The mouth opening is the top clear without shaking. The aroma is "the Hanayo Yoku". The taste is perfect, and it has a nice sharpness from the sweetness, which I love. The second saké was made after a slight downpour. The aroma is subdued, the sweetness is subdued, and the miscellaneous flavors are stronger. If I were greedy, I would still like to encounter the "Miyamanishiki" I drank long ago again. On the "Hana-yori is delicious."

2024.5.4↓↓ A slight correction. I left it at room temperature and drank it for the first time in a week. I found it to be "calm" or "cohesive" and I really like it. I had only heard of this brand by name. I found it at my usual store and bought it immediately. The taste was slightly effervescent with a hint of Yamadanishiki. It was a little expensive, but I think it was worth the price. This is the kind of sake that I would drink in large gulps. Today, the temperature dropped for the first time in a while and sake tasted good. It's a dangerous kind of sake that can be enjoyed even without a side dish. The aroma through the nose is also good. It's been a while since I've had a good sake. I can't stop drinking with a piece of "reduced-sodium" salted kelp in my hand. I've been tired for a while now, and I think I'll be free today.

(Reference/Remarks) I asked the manager for a recommendation today because the usual clerk at my usual liquor store was serving me and I could not make a decision. I told him that I liked the most recent "Nisato no Aizan", "Saku no Megumi no Ji", and "Huang Suisen", and asked for a recommendation for "Hi-ire", and this was it. I have been curious about "Yellow Narcissus" for a while. It was recommended by the usual clerk at my usual liquor store. Frankly speaking, I think it is a little too sweet. As I was told, it is the type of sake that goes down smoothly when chilled to a crisp. I would prefer it to be a little closer to room temperature but still have a sake feel to it, but this is it and I will enjoy it today. A break from the busyness of the beginning of the year is a hana-yosu, which I stocked up on at the end of the year. Several years ago, I first drank Miyamanishiki at a certain izakaya and enjoyed it so much that I have been searching for this brand ever since. Memorandum] My personal impression. I prefer Hachitan-Nishiki about an hour after opening the bottle rather than after opening the mouth. The aroma is stronger than other brands, which I really like, but it seems more subdued than Miyamanishiki. The acidity is strong and gradually starts to coalesce, and after an hour, it is full-bodied, and I found myself going through about 3 gou of the bottle. Life is full of many things, but I am grateful to be able to nourish my energy with something I love and that tastes so good. I look forward to a world where I can socialize with my friends without hesitation. I look at it as a time to deepen my life, even if it means a little patience for a while. Just as alcohol seeks time to mature.
