Get the October sake. Aki-no-Sei is a sake rice indigenous to Akita Prefecture. It has been around for about 25 years. It has only been brewed for about 25 years, and is rarely brewed on its own. It has a very strong umami flavor, but goes surprisingly smoothly. The yeast is Akita yeast No. 12, which is the same yeast used for tourmaline sake. It is not a ginjo, but it has a ginjo aroma. Mansaku no Hana never fails to deliver. November is the month of Aizan. I am looking forward to it.
