This is Kinokawa Special Junmai Polished 60 "Aki Agari" from Isahaya in Nagasaki. I don't like the hiyaoroshi type when it's too mature, but this one is full, crisp, and fresh, and very tasty. I recommend it.

Shigeya Shuzo in Iki, Nagasaki, released "Ikinahakarai Junmai Ginjo" only for the local supermarket Elena in Nagasaki. Although it is a shochu brewery, it is very delicious because it is the brewery which has produced famous sake such as "Yokoyama Goju" and "Yokoyama". It is fruity, not too sweet and not too spicy. If you come to Nagasaki, please buy it!

Unfiltered, unpasteurized sake is my favorite type of sake, but what's more, it's made with naturally farmed rice. Moreover, the rice brand is local rice. The rice was not gooey and sweet, and it was crisp and delicious.

If you come to Okayama, you should visit Kamigokoro. This sake brewery is famous for "Fuyu no tsuki". This one is cloudy. It has a clean and refreshing taste, but the sweetness at the end is well balanced. However, the more you drink, the more you feel the sweetness is disturbing... This is usually the case with cloudy sake.

In Nagasaki, sea cucumbers are served at New Year's. It is served with Kaze no Mori Dewa Kaze 507 from Aburanaga Shuzo in Nara. Akizubo is delicious, but this is also delicious. It is my favorite sake brewery.

Okazaki Shuzo, a female toji's brewery in Ueda City, Nagano Prefecture. I took the time to visit the brewery, so I bought a bottle of "Kosakaya Heisuke," a junmai ginjo sake only available here. It's fruity, crisp and sour, and has a nice, clean taste. I was very happy with the sensation of a faint schwack on the nose. I wish I had bought it in a bottle.
