I compared local sake at a tavern in Yuda Onsen, Yamaguchi, and liked it best. It is rich but not heavy, with just the right amount of acidity and a nice sharpness. I would like to drink it again.
It suited my palate better than the other version made with French rice. It is not white wine-like, nor is it a sake-like wine, but rather somewhere in between, or closer to sake. It has a clean and clear taste. It has some acidity, but not too much. But it's expensive!

These three names are the surnames of sake rice farmers. It was a fun sake tasting, and I was surprised at how different sake tastes depending on the rice, even if they are made in the same way! It was a fun sake tasting. My favorite was Tsunabu, which had a sour taste.

Rokujyuyosu is rather clean and lacks punch, but this one is a raw sake, and since it is also a draft sake, it had a nice richness and freshness.

How can you get so much acidity out of rice?
If a sake novice drinks this as his/her first sake, he/she will recognize that other sake (the taste we recognize as sake) is a completely different thing, a different genre of sake.
It is an easy-drinking sake that you will find yourself emptying the bottle.
Before jumping on the Shinkansen in Hiroshima, I quickly picked up a bottle of Ugo no Tsuki Ginjo-Junmai Sake at the sake corner of the station building.
It is not "junmai ginjo" but "ginjo-junmai" for some reason.
It is not a draft sake, but it needs to be refrigerated. It is said to have been aged in a refrigerator after being fired.
It has a good balance of umami and spiciness, and you will never get tired of drinking it. It is not as surprising as the trendy modern type, but I think it is the best as a regular sake. Next time, I would like to buy a bottle.

Shigeke Shuzo of Iki, Nagasaki, sells Ikinahakarai Nama Sake to local supermarket Elena. It is a must-try sake when you visit Nagasaki. It is fresh and juicy. There is also a non-nama sake version, but I prefer this one. I would like to visit Iki someday.
My first Nabeshima. This is a special Junmai Green Label Nama Sake, which is very good at the 1600 yen range. It has a good balance of sweetness and sharpness. I really felt that sake is a wonderful sake.

I bought a bottle of sake because I saved up some points on a website. Ordering a bottle of sake that I've never had before was an adventure. But it was very good! It's sweet to drink, but has a nice crisp finish. My preference is for something even fresher, so I'd like to try something else again.
