Otters, unfiltered Junmai Daiginjo, Polishing 30% to 99%, Tankoba Kumi, 720 ml. Available only in spring and fall, by pre-order only. The "tamba-kumi" is a special Otter that can only be enjoyed twice a year, in the spring and fall. The concept is to bottle it right after pressing. The sake is clear at the beginning and has a sharp taste when gulping down, which is a different sensation from the usual polished 30%90% sake.

GANKI Junmai Unfiltered Nama Sake 🍶. This one is good too! It has a soft sweetness, not as sweet as the "Toyo Bijin Limited Junmai Ginjo Jyundo Ittou Aizan Nama". It is served chilled, but it tastes better at a slightly lower temperature. It has a thick texture on the tongue, and is sweet but drinkable.

Tazake Tokubetsu Junmai-shu 720ml My father bought this on a whim. Founded in 1878, it is the only sake brewery in Aomori City, and uses Aomori's own sake rice, "Hanabukiyuki". It is a sake that requires refrigeration, and the taste differs between room temperature and refrigerated versions. The taste is different between room temperature and refrigerated.

Kaze no Mori ALPHA 1: Gateway to the Next Chapter 720ml (Aburacho Shuzo)! The moment you take a sip, it slightly tingles your tongue, followed by a deep sweetness that fills your mouth. It is slightly effervescent and full of gas from fermentation, so when you open the seal, it makes a "pop" sound like wine. This has become one of my favorite bottles 🍶.
