This is a special junmai from Shizuoka Prefecture, Kumonoue, brewed with Mt.
The rice used is the original Shizuoka sake rice "Honorifuji" and "Shizuoka Koshihikari".
The water is of course "Fuji's underground water" and the yeast seems to be "Shizuoka yeast" which Shizuoka is proud of and has produced many prize-winning sake at many sake competitions.
From the first aroma, I already had a feeling that the sake would be dry, and when I actually sipped it, I was right 👍.
The acidity was followed by a subtle ripe fruitiness, and the finish was soft and smooth like the melting snow in Fuji.
I drank it cold today, but I think it would be good warmed up.
I thought this sake is suitable as a food sake. It might be good with Shizuoka oden in this season.
