Fruity, citrusy aroma, albeit discreet. I like its quietness and freshness, although I feel that it is light because of its acidity, but the other elements are modest. It also has a certain amount of umami. It has a certain minerality that I would like to match it with raw fish (but this is a soba restaurant that does not serve sashimi).
I have tried Minami in the past, but this time I would rank it higher.

It is hard to say because of the difference in condition, but I think the next version is more fruity. I think I like this one better because it has less koji smell.
Kaze no Mori is good because it clearly shows the individuality of the brewery.
The downside is that it is rather complete on its own, so you have to worry about what to eat with it.
