Pineapple-like aroma and a sweet delicious taste. Exquisite acidity. It has an elegant sweet aftertaste that lingers gently. The aroma and taste are similar to True Red, but the Red has a juicy flavor and the White has an elegant sweetness. I was surprised that I could buy it at 1,800 yen for a 4-gallon bottle. It was so good that I could be convinced to buy it for more than twice the price. I've had the red, white and beyondX varieties of Shungiku, and they were all very good, making me a fan. I'm sure I'll be buying their limited edition sake every year from now on. Next week, blue sapphire will be in stock at a local liquor store, so I'm looking forward to it.

Aroma and sweetness similar to pineapple. But I think what stands out the most is the juicy flavor. The flavor spreads throughout the mouth. The bitterness is slightly less. I thought it was a wonderful gem with a combination of juiciness and freshness. I think it was made with a lot of attention to detail. I drank it with a beef bowl I bought at random, and it went well with it. The aftertaste does not get in the way of the food, and does not overpower the strong flavor. I can't get enough. I'd rather drink it by itself, but I'd like to learn how to drink it with food.

My first aged sake. Light amber color. When I drank it, I thought "Oh, is that plum wine? It has a sweet bitterness. After that, the flavor and spiciness continue gently. It was a fresh surprise to taste something completely different from ordinary sake. I also thought it went very well with the lebanilla I bought at Seven. Is this what you call pairing?

The price is a little high, about 2500 yen for 720ml, but I was curious and picked it up. The ratio is 29%. It is very clear. No miscellaneous taste. Elegant sweetness. Umami and a slight bitterness. The taste is similar to Ottersai, but with a syrupy sweet aftertaste. I love sake with complex flavors, but I also love refined sake like this. A great experience and well worth the price.

I've recently become a fan of sake, and when I look up sake in Saitama, where I now live, I'm always curious about a sake called Hanayo-yoku that comes up at the top of the list. When I looked it up on the internet, I was told that you can sometimes buy it directly from the brewery. When I called directly, I was told that it was available today. It took me about an hour and a half to go there. There was only one bottle left, but I bought it. When I drank it, I was surprised at the impact of the aroma and taste. It is said that it has a sweetness like pineapple, but it has a very mellow sweetness and flavor. But right after that, there is a crisp spiciness that leaves a little sweetness and a clean aftertaste. This is what makes sake different from juice, and what makes it so interesting.
