Last night, we had a great time at "Kangiku"'s Nagi Spring Misty Mild Nigori Unfiltered Nama Sake We had it! Smoked chicken skin. Eggs. Paired with cheese and wasabi shoyu with strips of wasabi and yams! Shangiku-san is excellent! Sweet aroma and flavor! Delicious sake! I felt the brewing technique. Sake is so interesting! Thank you again for a delicious meal!

Tonight, Imanishi Sake Brewery's "Mimurosugi" Romantic Series I had a bottle of Junmai Ginjo Yamadanishiki. I thought it smelled like alcohol. The taste is mellow! It has a subtle melon-like sweetness that is delicious. Paired with Miso-based Anko-nabe It paired well with the miso-based I tasted the harmony of fermentation. It was delicious!

Akita Sake Brewers Cooperative I bought this bottle at Akita Shun Ginjo 2021 last October. I drank the last of the six bottles I drank it yesterday. It's labeled as Junmai-shu, but it tastes more like Ginjo-shu. Is it the result of being brewed in a wooden bucket and stored in a mizunara barrel? Is it the stable No. 6 yeast? Improved Shinko? It may be easy for Shinsei, but It's easy to get into. I paired it with boiled scorpion fish and enjoyed it.

I had my first bottle of "Tobiran" from Mori Brewery in Hirado, Nagasaki. It was the first time for me to taste "Shinran" from Nagasaki Hirado Mori Brewery. Pairing with Oden Goshi The first day was very sharp. I enjoyed the oden and sake for two days. The second day, the flavors blended well. Thank you for the delicious meal!

First time drinking alcohol in 2022. It is a pink sour sake. It's a pink, swooshy sake that will decorate the New Year. It took me a while to open the bottle. The aroma is peach🍑? The taste is strawberry 🍓 in a strange harmony. I enjoyed it with Osechi and Sashimi. I enjoyed it. We enjoyed it on New Year's Day. Thank you very much for the food.
