I bought this bottle at Akita Shun Ginjo 2021 last October.
I drank the last of the six bottles
I drank it yesterday.
It's labeled as Junmai-shu, but it tastes more like Ginjo-shu.
Is it the result of being brewed in a wooden bucket and stored in a mizunara barrel?
Is it the stable No. 6 yeast? Improved Shinko?
It may be easy for Shinsei, but
It's easy to get into.
I paired it with boiled scorpion fish and enjoyed it.
