The sake was introduced and served to us in a stiff manner. One sip and you can feel its individuality...! You can feel the sweetness of the rice in your mouth and when you swallow it down, but it is not just a sweet sake.
Yellow Carp...Umakuchi with a slight sourness. Slightly acidic, clean and not too strong.
Summer Carp...Unique umami taste! A strange flavor that lingers on the tongue.
Warmed to lukewarm. What umami! The rich umami that doesn't skip even when warmed and the dryness that is not too harsh make it perfect for a mealtime sake on a cold day like this!

Quite my favorite dry junmai ginjo. It has a sake meter of +7, and I think this is the perfect level of spiciness for the first glass.
