Backlog from Feb. right after opening a bit dull - fizzy with soft umami and restrained sweetness. Acidity. But after 5-6 days the sweetness has increased, dizziness is gone and it’s a more juicy mix of sweetness, umami and acidity. Good’ 4.25/5

Another ridiculously good sake from Hanaabi. Pineapple is all over in both aroma and flavor. Rich sweetness and umami. A bit of pleasant acidity and bitterness in the finish. Gets even better few days after opening. 4.50/5

However 2 day after opening the sweetness has increased slightly and creates a good balance with umami. It does not hold up on its own but good with food. 3.50/5
