Last year, we did not have a chance to meet Kabutomushi. This year, we will taste Kabutomushi in Edo. Adult lemon squash is still alive and well. However, it is not a sweet and easy-to-drink sake, but has acidity and a proper structure, as expected. It is not a sake I would recommend to those who are not fond of sake, but rather to those who are not so familiar with sake. I usually drink sake in small sips, but I definitely like Kabutomushi better if I drink it in large gulps. I love Kabutomushi.

Wind Forest, I have a hard time deciding which one to choose. The more I agonize, the more they all taste like this! The more I think, the cheaper I go home. Today, I tried this one, which is a classic. It has a nice sweetness from the rice, but it is not the modern style, and there is a classic dryness in the gasiness and the finish. I'd like to compare various Kaze no Mori on the spot.

This is Shinshu Kamerei, a limited edition from the brewery. The distinctive aroma identifies it as Shinshu Kamerei. It goes in easily and has a very good balance of moderate acidity, refreshing sweetness, and umami. Shinshu Kamerei is good on its own, but I think it also goes very well with dishes. Today, when I paired it with nozawana, I could feel its sweetness and umami even more.

This is my favorite Kukai Inflight that comes out in early summer. It is an unfiltered, unfiltered sake that has been fire-aged once. It has the goodness of being fire-aged. It has moderate acidity, fine sweetness and umami. It has a juicy image. It seems to be good to drink it with a strong taste from now on. The juiciness of the concept, the refreshing sharpness, the change of the season, this is a bottle that can be enjoyed just like that.

Today, it is Tenbi. I think Tenbi has a perfect balance. The aroma is fresh and sweet, but the fruitiness is not too strong. It has a good acidity and is easy to drink, but you can sense a solid structure. Today, I am very satisfied with sake alone, but I would like to match it with food as well. It is a very good choice.

It is a light nigori sake. I love Takeyuki and was also attracted by the label. The label says "drink with your senses," which I agree with. The aroma is fruity and spreads first. When poured, it is light nigori, which makes you want to drink it. You can also feel the acidity. It is assertive, but you will never get tired of drinking it. Perfect for modern lovers.

Get it on your travels. It's made with the sake rice Snow Goddess, a much-drank sake in the region. It has a classic feel, yet it is mellow and you can feel the deliciousness of the water. It goes into your body more smoothly than you can imagine.
