You're a metaphysician, aren't you? This is a drink that is hard to get at the first meeting. One thing I can say is that it has a distinctly sweet taste and it's refreshing. It's just plain delicious. No, wait. It's not that straightforward, is it? The willful bitterness will also come later, and it's not that simple. But my insensitivity doesn't allow me to understand the subtlety of its true nature, which at first glance seems to contradict itself. It's a difficult drink to make.

I had the good fortune to compare the fourteenth generation, so I ended with this classic, which I was previously shocked by. The impression is still the same: a perfect balance of decency and nothing is missing. Even after tasting the two junmai ginjo-shu, there was no distinct alcoholiness, and it's not as if the rice flavor and spiciness were fighting with each other. It's a refined sake that convinces me "I get it" every time I drink it. Cheers.

This is one of the highest priced sake I've ever tasted. I'm a novice with a penchant for costume-worthy sake, and I wonder if it's difficult for me to taste it in a normal way without the color glasses. But after taking a sip, I was overwhelmed by its elegant, sweet aroma and smooth, soft, deep flavor that seemed to melt on my tongue. I feel like I understand a little better, but I still feel like it's a waste of time for me, but I'd like to have this kind of experience from time to time to learn a little bit more. Cheers to that.

It has been more than 10 years since then. I didn't even know the basics of sake yet. I drank this sake for the first time at a little chicken restaurant in Aomori, where I used to visit almost every week on business. It was neither too spicy nor too sweet, and there was nothing to cheat; I was captivated by its clear and imposing flavor, just like the humble and patient people of Aomori who fell in love with it. When I taste it now, I feel it is much more chilling and dry than it was then. Has my mouth grown thicker, or have I grown old? Or is it the condition of the drink? Nevertheless, the one thing that doesn't change is its unshakable and unmistakable presence. That's probably why it's such a great sake. Cheers.

I wanted to have another drink on the Shinkansen, so I asked the vendor on board the train, and he told me that there was a Junmai and unfiltered version. When I opened it without much expectation, it came in with a crisp, clean, dry taste at first, but as soon as it slipped into my nostrils, I could feel the deliciousness of the rice softly. We had the sake of Kurobe at Kurobe Unazuki hot spring. Although it's a pure rice, it's still a fine and dry sake with an impression of the local character. At first, drink it at room temperature. It's refreshing, but you can feel the sweetness and flavor of the rice directly. You can cool it down gradually and drink it at the end.
