It has been more than 10 years since then. I didn't even know the basics of sake yet. I drank this sake for the first time at a little chicken restaurant in Aomori, where I used to visit almost every week on business. It was neither too spicy nor too sweet, and there was nothing to cheat; I was captivated by its clear and imposing flavor, just like the humble and patient people of Aomori who fell in love with it.
When I taste it now, I feel it is much more chilling and dry than it was then. Has my mouth grown thicker, or have I grown old? Or is it the condition of the drink? Nevertheless, the one thing that doesn't change is its unshakable and unmistakable presence. That's probably why it's such a great sake. Cheers.
