I got the new Masa's Colors series, ecru: 🖐️ It is sweet and sour and delicious! It is an easy to drink, non-habit forming sake that is delicious, as is typical of Shinmasa. (I don't have much to comment on because it's so good and non-habit forming 😢) Thanks for the treat!

Shunyo is a fantastic rice that has been repeatedly tested and brewed. The new sparkling sake "DENEB" was born from Abe Sake Brewery's serious efforts to deal with such rice. I thought I was being careful when I uncorked this sparkling sake, but it turned out to be a bit 💦. I was angry with my master 😢. The smell is fresh, youthful and fruity! As mentioned in the description, it has a touch of muscateliness. Somehow the image is the same as Abe-san's sake made with Raku-fu-mai? The taste is completely different, quite refreshing, with umami and some acidity. Low alcohol, crown tailoring, and 500ml means that one person can finish a bottle 🍶. Thanks for the treat!

100% "Omachi" grapes from the Takashima area of Okayama Prefecture are used. It was supposed to have a delicious deep sweetness, but it is really deep! The sweetness is the same, but the deep acidity and umami come together, and there is also an image like a fully ripe fruit 🍌. The smell is also quite heavy with a hint of rice. I think it's delicious to drink like a dessert! 🍰 Thanks for the treat!

This sake is brewed using a traditional method called "Hashira Shochu Brewing," in which shochu made from Abe Shuzo's own sake lees is added to the sake during fermentation. This adds the sharpness of shochu to the goodness of junmai-shu, giving it a new taste. The smell is quite shochu-like. The smell is quite shochu-like? Sake lees? It is a little bit like a sake lees. When you drink it, you can feel the richness of the rice. The full-bodied rice flavor is followed by a little bit of sweetness, and then it disappears without a hitch. It was a delicious sake, different from the image of Abe Shuzo's sake that I have received so far! Thank you for the treat!

Commonly known as "Earth". Brewed entirely without pesticides, "Earth" is the most agriculturally sensitive of all the "Colors". It's been a long time since I've had Shinsei! This is my first time to try Earth 😄. The smell is sweet and sour and mild. It smells like wood and looks delicious. I feel some medicinal taste because of the wood smell 💊. The taste is sour and sweet right away, and the aftertaste is astringent and slightly bitter with a delicious flavor. I wonder if some astringency remains at the end. It has a depth and weight of flavor that is hard to believe it is 13 degrees, as one would expect from Shinmasa. Thank you for the treat. !!!!

The 2024BY summer gin ban of "Echizen Misaki" has been lifted! The theme is a sharp summer sake with (rise) acidity (sun). The smell is melon-like and surprisingly mild 🍈. It is said to be acidic, but I didn't feel it much! Maybe because I usually prefer habitual? 🤔 The impression is quite refreshing with a good flavor! The aftertaste is bitter, but it disappears quickly and seems to be able to be drunk easily. Thanks for the treat!

Carefully selected Yamadanishiki rice is used at 55% polished rice. Junmai Ginjo-shu brewed with Kochi Prefecture's original yeast, AC-95. A summer sake with an impressive, elegant label depicting gracefully swimming Nishikigoi carp. The smell is quite fruity! Do you feel the pineapple-ness? It is 🍍. The first thing you taste is the umami and acidity. The lingering finish, which is crisp and gassy, is just like a summer sake 🍶. It was a delicious sake that can be enjoyed all-around, both during and after dinner! It was a treat!

Abe SIRIUS" is named after the star that shines the brightest in the "★ (Star) Series," which includes VEGA, REGULUS, and FOMALHAUT, all first-class stars. A sparkling sake with a hint of ori! 🍾. The image of Abe-san is acidity first, but this one has sweetness and umami. Sweet and delicious. The aroma has a unique savory flavor? Caramel? Aroma? I feel a unique aroma of caramel? Not only sweetness, but there is also a lingering bitter taste. I finished a bottle by myself because of its delicious taste and mouthfeel without feeling the low alcohol content... 😋 (I have an excuse to open it because it is a crown...) Thanks for the treat!

Hitogochi" and Tochigi yeast are used. The smell is quite fruity🍋 or citrusy? When you drink it, you first taste the sourness, and then you immediately taste the sweet, delicious, sweet umami 🤤. The aftertaste is long and ends with a slight bitterness. I feel the freshness and the vividness that is typical of nama-shu, and I feel like I'm going to drink too much of it. Anyway, it is well-balanced to my taste and delicious to drink. .... I think it would go better with cheese than dried food such as surume (dried squid). If I see it again, I'll definitely have it! Thanks for the treat: !!!!

Good morning, Komisan 😃. I'm from Kochira, an all Tochigi restaurant! As you said, it's really delicious 😙. Sake from Tochigi! There are a lot of good ones, so please try some 👋.

Mr. Jay & Mr. Nobby Good morning ☀☀☀. To be honest, I was completely unaware of this sake, which is full of the goodness of Tochigi Prefecture, but after one sip, I became a big fan! 👏. The world of sake still seems to be wide... I'll try a variety of them! Thank you 🙇.

Nigori (nigori) sake is brewed by brewers who put a lot of time and effort into it. It is only roughly strained from the mash of pure rice sake, so there is plenty of rice in the bottle. We served it chilled first 😋. When chilled, the sake is quite dry with a freshness and a chattering sensation that is typical of nama-shu. It is a very man's sake with a bitter and astringent aftertaste. I wonder what kind of snacks would go well with this kind of sake... 🧐 It was a delicious sake in a genre I have not had much of before! I had it lukewarm 🤤 with the previous information that it tastes great heated up. My first impression when I heated it up was a delicious bitterness! I felt the same as I did when it was cold, but the bitterness and a slight bitterness were present, while the umami came out in full force and was delicious! I'm not sure what it's from, but it has a slight savory flavor? I don't know what it's from, but it's also delicious! Thank you very much!

THE SAZANAMI" is released only in years when the rice easily melts. It is a well-balanced ogara-mi sake with a full, smooth, sweet flavor and acidity that makes it easy to drink. I bought it when I visited my favorite sake brewery, Abe Sake Brewery, and saved it to drink 🤤. The smell is quite fresh and fruity. The balance between acidity and umami is slightly more acidic. It also has a fizzy taste and is closer to the Abe series. There is a slight bitterness, but the 12% alcohol content and the freshness of the unpasteurized sake makes it easy to drink. It is just like a ripple, and it is easy to drink. Thank you very much!

Hitomebore rice from Miyagi Prefecture is used at 55% polished rice. By using flat polished rice for the hanging rice, the brewer pursued a clean and light flavor. I was curious about the name and label, so I bought it. From the name, I thought "haha, sweet and sour type? When I drank it, I was surprised to find that it was spicy and I could taste the umami of the rice. The aftertaste is clean and the acidity is not strong. I thought it would be better to drink it cooled like in summer. Thank you very much for the meal!

Sake brewed with 100% Kame-no-o, a pesticide- and chemical-fertilizer-free sake, grown with great care by Mr. Koyama of "Chantoseya Farm" in the terraced rice fields of Kamiseya, Miyazu City, located in the northern part of Kyoto Prefecture. I bought it at my favorite liquor store out of curiosity. It smelled like rum and was summery and refreshing. When I tasted it, it was very interesting. It is quite refreshing and dry, with a hint of sourness. Perhaps due to the fact that it is 11% alcohol, the freshness of a young white wine, rather than the umami and richness of rice, comes out in full force. The lingering finish is long, with just a hint of bitterness and astringency. It was an interesting sake that could really be mistaken for a white wine if you drink it with your eyes closed. It was a treat!

SAKE is made in small quantities in a small winery as a hobby, with the entire Obuse Winery staff away from winemaking only for a few weeks when snow and bitter cold prevent them from working in the vineyards. Each bottle is fermented with a mixture of No. 1, No. 2, No. 3, No. 4, No. 5, No. 6 yeasts and natural fungi. When you taste it, you will find a good balance of sweetness and acidity, and if it is good, you will taste a little bitterness and astringency. The astringency may be due to the impression that it is made by a winery, or it may be due to the impression that it is made by a winery, but it has a wine-like atmosphere. The aroma is fruity and ginjo-like, and can be served both during and after meals. It is interesting that the bottle is a magnum bottle, not a 1-sho bottle, as is typical of wineries. Thank you very much for the meal!

Daiginjo made with Omachi from Kuheiji. It is clearer and drier than any of the Omachi sake we have had recently, and has no peculiarities. The slight bitterness and acidity are well balanced, making it easy to drink. It has no peculiarities, so it seems to go well with all kinds of food. I heard that it can be aged for a few days, but I think it will be gone before that. Thank you very much for your kindness!

Junmai Daiginjo Gold Label is the flagship of the Abe series. The aroma has the smell of delicious rice flavor. When tasting it, one gets the impression that it is crisp and clean with a touch of acidity and umami, just like the Abe. There is no cloying taste at all, and the fruity flavor is truly a daiginjo. It is delicious. Thank you very much for your hospitality!

Kaze no Mori - Omachi from the standard 807 series. The mouthfeel is sweet and umami, but the aftertaste is complex with a lingering bitterness. I didn't get as much of a gassy feeling as some of the reviews... This is the taste of 80% polished rice. I would love to have other rice as well. The homemade gari also went well with it, though a little less sweet. Thank you very much.

The "Haneya CLASSIC" is a fantastic recipe that was created by unraveling the existing materials at the brewery. It is now revived with a breath of fresh air. Its appearance is quiet and gentle like a silvery snowy landscape. I got the impression that it is well-balanced. Although it is rated -3 on the sake scale, I felt it was dry with moderate bitterness. Haneya also has a variety of lineup, so I would like to compare them! Thank you for the sake.

The year before last, our president said, "Make sake that looks like banana juice! The president of the company said, "Make a sake that looks like banana juice! The smell when you open the bottle is completely bananas. It smells like bananas with a hint of ripeness. When you taste it, it is extremely sweet. When you eat a ripe, ripe banana, you may feel a slight fermentation, just like that. The heavy sweetness is accompanied by a hint of banana on the nose. I didn't know there was such a sake... I don't think it would be a good choice for a mid-meal drink, but I would like to have it after dinner like a dessert wine. Also, as recommended by the brewer, it is definitely a delicious sake even when mixed with milk. Thank you very much for the meal!
