Hitomebore rice from Miyagi Prefecture is used at 55% polished rice. By using flat polished rice for the hanging rice, the brewer pursued a clean and light flavor.
I was curious about the name and label, so I bought it.
From the name, I thought "haha, sweet and sour type? When I drank it, I was surprised to find that it was spicy and I could taste the umami of the rice.
The aftertaste is clean and the acidity is not strong.
I thought it would be better to drink it cooled like in summer.
