Memorandum Sake rice Sanuki Yomai Polishing ratio 58 Slightly fruity on the palate. The lingering aftertaste is sweet with a hint of bitterness, and the acidity is normally well balanced. Easy to drink. Very tasty. I found out that it is made by the brewery Sanuki Kuraudai. I can understand why he likes it so much.

Memorandum Sake rice Unknown Polishing ratio unknown Sweet fruity and juicy. The lingering taste is a bit complex and bitter like sweetness. If it is said to be a Japanese pear, it seems to be a Japanese pear. Delicious.

Memorandum Sake rice: 80% Domaine Sakura/Kame-no-o, 20% Domaine Sakura/Yamadanishiki Polishing ratio Koji rice 50% Yamadanishiki Kake rice 60% Kame-no-o Sour and fruity on the palate. It is juicy with a sweetness that is not unpleasant. The sourness that passes through the nose is like taking a bite of fruit. The aftertaste is like green apple or pear. Quite delicious.

Memorandum Sake rice Raku-fu-mai Rice polishing ratio 55 Sour and bitter to gently sweet on the palate. The aftertaste is clean, with a hint of sweetness and acidity. Good sharpness. The overall impression is light. Easy to drink. Very tasty. I'm glad I didn't drink enough and impulsively went out to buy some.
