Today's trio of Ehime sake drinking contest is a sake brewery in Matsuyama City. Sake from Chuyo area. Oddly enough, today we were able to compare sake from three different areas of Ehime Prefecture. I guess it means that they are getting used to Ehime. The first taste is clean and well-balanced. You can feel the fruity ginjo aroma and also enjoy the flavor of junmai sake.

The second sake brewery in Ehime's sake drinking comparison is located in Seiyo City Jokawa City. Nanyo sake. Nanyo, even though it is in Seiyo City, is a confusing place for those from outside the prefecture. But that aside, here are my impressions of the sake. The taste is light and clean. It has a slight tangy taste at the top of the throat, but we accept it as the richness that is typical of a honjozo sake. The sake's sake meter is +4.

A sake brewery in Saijo City, Ehime Prefecture. Sake from Toyo. Junmai, light nigori. Slightly effervescent. It has a good mouthfeel, strong acidity, and a slight effervescence. It may be best as an aperitif. It is a good choice for the top of today's Ehime sake drinking contest. Sake meter is -3.5.

Business trip to Matsuyama City. At an izakaya in Nibancho, ordered Dogo Kurazake on the menu, but they were out of it. I ordered a bottle of Yuki-Jaku, which I often encounter in Matsuyama. Before drinking it, I had an image of it as a food sake, but after drinking it, I found it to be light and spicy without interfering with meals.

Today I went on a business trip to Toon City, Ehime Prefecture. I knew I couldn't avoid drinking sake from the brewery where I was going on my business trip. So I ordered some sake from the Shimada Sake Brewery at the restaurant where I was staying. I had wondered for some time which mountain was called "Kofuji," but the website clearly states it clearly. Here is a quote from the website. The name "Kofuji" was named after "Iyo no Kofuji," an island off the coast of Matsuyama that can be seen from the brewery in the distance. My impression of the sake is that it is a bit unique from the first taste. It is very light and dry. It is a sake that does not interfere with meals.

Sake from Miyoshi City, Tokushima Prefecture, purchased on a business trip to Tokushima with sashimi of sardines. Since it is a fresh sake that requires refrigeration, it was carefully transported with the sashimi in a refrigerated bag. After returning home, we enjoyed it together. It has the freshness of fresh storage and the sake-like character of honjozo (Japanese sake) in a modest way. It also goes down the throat nicely.

The third sake of the Ehime sake tasting comparison is from the town of Elkawa in Ozu City. We had just recently visited Ozu Castle and Garyu Sanso in this area known as Ehime's "little Kyoto. We couldn't miss the sake from Ozu because of that. Compared to the other two, this sake has less character, but is a beautiful junmai ginjo. It is crisp and light. It has a nice smooth taste. The first taste is fruity, with a melon-like flavor. The sake level is -10, but it does not feel that spicy.

The second sake of the Ehime sake comparison is from Uwajima Sangen City. Yesterday, despite the tai-meshi from Uwajima, I did not pair it with Uwajima sake, so I thought I would make up for it here. The appearance is slightly shiny and shiny, with a slight yellowish-red color. Like other junmai ginjos, I was under the impression that it would be aromatic and fruity, and less junmai-like, but it was as if it had been punched from a different direction. Aromatic herbs? Or a little nutty, but the richness of Junmai is also present. Ehime's own sake rice variety, "Shizuku Ehime," is the unified brand of Ehime. It is said to be characterized by its umami and soft sake quality, but unlike other breweries, I felt a strong individuality in this sake. The sake level was -1.

The sake to be paired with today's tai-meshi from Uwajima, which is also originally from Nanyo, is probably Uwajima sake, but I was lured by the menu's naming, and since it is also from Nanyo, I thought it would be okay. I ordered it because it's also from Nanyo. It is a sake from Uchiko Town, Kita County. As the description says, it has a crisp and clear taste. It is fruity from the first taste and is a Junmai Daiginjo. Although it is said to be super dry, I did not feel it was that dry, which was a nice complement to the local cuisine of Uwajima. Rice used: Yamadanishiki Rice polishing ratio: 50%. Sake meter rating: +8

We chose the Ehime sake comparison menu. The third best was Hatsuyuki Sake from Kyowa Shuzo. Sake from Tobe, Iyo-gun. Oh, no! Why not a sake from Nanyo after Toyo and Chuyo? I am sorry that I chose this sake based on my own sense, but there is no blame on the sake that was chosen. Moreover, the order in which we drank the junmai ginjo sake followed by the ginjo-shu was absurd. However, it is precisely because the beautiful sakes followed that I was able to understand the robustness of sake.

Today, May 25, 2021, is the day when the results of the 2021 National New Sake Competition are announced. On such a day, we enjoy sake that is different from everyday sake with sashimi of tuna. Sake brewed by a major Nada brewer with an insatiable spirit of inquiry. The fruity ginjo aroma you sense the moment you put the glass close to your nose, and the delicious and mellow flavor of rice from the first taste. It is a well-balanced sake with no unnecessary mixtures. The sake is so outstanding that the sashimi is not as good as it should be. It would have been better to enjoy this sake as the main ingredient rather than as a food sake.

I would have preferred to pair the kobudai sashimi (from Imabari Port) with a sake from Toyo, but I went with this sake from Chuyo Toon City, which I purchased most recently. Although the sake is super dry and has a Sake +12 rating, it does not feel that dry, and as the label says, it has a "refreshing taste" that does not interfere with the flavor of the food, making it light and easy to drink.
