Ehime local sake drinking comparison extra. It's the last of the end of the year, so I can't end up with someone (sake) that isn't my favorite. A brewery in Nanyo Ozu City. I drank it while remembering how I enjoyed Ozu Castle and the Elk River in the summer. I was a bit skeptical as I drank it. It is a sake right from the start. It has a full-bodied flavor of rice with a hint of ginjo on the palate. It is a good choice for this year's first sake. The label is fashionable, but at the same time authentic. It does not look like Nanyo, but it is.

Today's trio is from a brewery in Hachitari, Nakayo Matsuyama City. When I hear the name of this brewery, I think of nigori sake. However, this time we will have a special junmai. From the moment I drank it, I felt that the flavor was not well balanced. I can feel a little bit of a cloying taste both in the mouth and down the throat. This sake is not a good match for me today, but I would like to try nigori sake next time.

Today's runner-up is a brewery in Dogo-Kitamachi, Chuyo Matsuyama City. I remember drinking a cup of sake from this brand before. You can't read "Nikitatsu" at first sight, and you don't know what it means. But now it is convenient. I look it up on my cell phone while drinking. The land of Dogo, NIKITATSU, Manyo, King Nukata. Words I saw in history classes and textbooks. And the names of Matsuyama's natural monuments. Many titles for many things. The first sip of this sake had a strong acidity, but as you drink it, it becomes less bothersome as your palate adjusts to it. It goes down your throat nicely.

I made a mistake with the check-in issue and resent it. My apologies for the like. Today's trio was from a brewery in Miyoshi, Saijo. Last time, the cup sake was a little old, so we had a revenge match. It looks a little golden. The aroma was a little old. The mouthfeel was a bit disappointing, as was the last time I drank a cup of sake. I may have to evaluate it with this brewery's specified name sake.

We have recently been skipping the Ehime sake drinking comparison. Today's starter is a brewery in Kanada-cho, Shikokuchuo City. Needless to say, it is a well-known brand in Ehime. It is a light and dry sake, but you can feel the umami and richness of the rice in your mouth. A beautiful sake with no cloying taste. Here is the description. Sake degree -5.5 Alcohol 16-17 Although it is a regular sake, Yamada-Nishiki is polished to 50%, the same level as Daiginjo, and carefully crafted to bring out the characteristics of the rice. Business trip to Ehime Saijo City. The squid sashimi and eel will be paired with Ishizuchi, a local sake from Saijo. It is served hot. From the first taste, you can feel the mellowness of sake and the umami of rice. Even when heated up, it sets the table nicely for the meal without any alcohol taste or harshness. I have had many Ehime sake, but Ishizuchi is the one that suits me the best. When I paid the bill, I was told that the sake was Ishizuchi's honjozo. I thought to myself, "So it is a honjozo after all. On the other hand, I was reminded of the fact that I had recently been expressing my impressions of daiginjo and junmai sakes immediately, just as I felt them. I realized once again that the lingering aftertaste, which is the real pleasure of sake, can be felt better with honjozo. Not only immediately after drinking, but even after leaving the restaurant, I felt the lingering aftertaste of sake along with the food. Honjozo is a real treat.

Ishizuchi sake is the perfect accompaniment to simmered kijihata grouper and conger eel tempura. This sake is named after the famous water "Uchinuki" in Saijo.
