I found this at a supermarket near where I was staying during an expedition to Shikoku.
I was surprised to see a lineup of sake that I had never seen before in the Kansai region, and the prices were so cheap that I couldn't resist buying some!
It was my first time to try Shimada Sake Brewery's sake.
I was told that it was alky and super dry, so I decided to be a little defensive 😳.
Pouring it into the glass, I smelled a slight sweet aroma: ⁉️
The first sip is spicy but light and completely light and dry👍.
It was a refreshing saké that you could drink in small gulps 🤣.

We paired it with salted squid from Kesennuma, Miyagi Prefecture, but the sweetness of the super-salty rice overlapped with the sweetness of the salted squid, making it not a good accompaniment.

Slightly refreshing but with a mysterious umami taste. Slightly mellow. Slightly lactic. It is said to be super dry, but not so much. Ehime sake seems to be sweeter, so I wonder if it is relatively dry 🤔It is also a little spicy when paired with grilled conger eel. It goes well with the flavor of the conger eel. The soy sauce and a little bit of wasabi is delicious 😋.
