According to the Internet, "The sake "Kofuji" is named after "Iyo-no-Kofuji," an island off the coast of Matsuyama, which can be seen from the brewery in the distance.
Compared to Eikan, it tastes more like a dry sake, with a clean, stripped-down flavor that goes well with meals.
This sake was recommended to me as a good match for sashimi. I usually don't drink this type of sake, but I felt that the lack of sweetness certainly made it a good match.
I found this at a supermarket near where I was staying during an expedition to Shikoku.
