For a Junmai Ginjo, the aroma and taste are rather subdued.

My first sparkling sake was a flax cat.
I've heard there are some that don't sparkle, but this was a winner.

Junmai Daiginjo Unfiltered Original Sake Kame no O
It is transparent and sweet.
There is not much bitterness, and it disappears easily.
There is no alcohol smell, and the aroma is gorgeous and natural.
It is delicious. Basically, I like Kame-no-o.
When time passes after opening, the flavor changes a little.
It is also delicious, but I prefer it when it is freshly opened.
Anyway, the aroma is good. I drank it in a wine glass, but I wanted to keep my nose in it.
The taste is clear and elegant. It has a modern impression. It has a little sourness and bitterness, but it also has a good flavor. It is a little spicy.

Ake no Tsubasa Rarigari 2021
Sweetness, oriental mellowness and gastronomy.
It's my personal favorite.
On the second day, the sweetness gets stronger and it's like a banana.
However, the aftertaste cuts through quickly, so I don't get bored.
It diminishes faster than usual.
The third day, the bitter taste came out. I'm sure there are some people who like this, but I personally prefer it when it's freshly opened.
I see, this is a popular taste and aroma.
It's not strong like sake, it's really delicate.
It has a sweetness and clarity, and also an oak (wooden vat?) The aroma of oak (wooden vat?) is also unique like wine. But it is also modest in a good way.
I can understand why people drink it in a wine glass. In general, it is an elegant and modern sake.
It is just as the label design suggests.

However, because it is so beautiful, it didn't have that much of an impact on me personally.

The sake is crisp, masculine and kind of cool.
It has no peculiarities and is easy to drink, just like its reputation.
It doesn't give the impression of being spicy.
It's not sweet, but it goes well with meals and everything.
The impression of the name "Pure Black" is perfect.
However, if you want to use it as a sake during a meal, I personally prefer to use Yukino Kayasha.
I'd like to try a different Yamamoto.
The first Eikoh-fuji is platinum. It has a clear and daiginjo-like aroma. It has a fruity taste and aroma. It is sweet because of the sake degree -9, but it is crisp and does not leave a sweet taste. After swallowing, you can feel the alcohol as a beautiful sweetness.

OCEAN99 Nagi Spring misty Usu-nigori Unfiltered Raw Sake
This is my first OCEAN99 since I missed it in winter. The sweetness is not so strong.
It has a fresh taste like grapefruit. It's not something I want to keep on hand, but it's good because it's seasonal.
I would love to drink it again next season.
Tastes as good as its reputation. It is a watery sake in the good sense of the word, just the way I like it. It has a clear taste without a strong aroma. But it's solid. Some reviews say it's best as a food sake, but I agree. It's delicious no matter what you're eating.

Light cloudy sake
The day we bought it, we had pizza for dinner, and we thought it was a mistake, but surprisingly, it goes well with pizza. The sake itself is muddy, so it seems to go well with cheese.
