Takasago山廃 純米吟醸 山田錦
DSK
When I drank it freshly opened and chilled, it seemed a bit peculiar, but the brewer's website said it was best lukewarm, so I tried it and was right. I tried it lukewarm, and I was right. The corners were removed and only the flavor remained. It was delicious.
It has a different flavor from the sweetness of the rice, but is this the flavor of Yamahai?
After letting it sit for a week or so, it became even mellower, and I enjoyed it lukewarm. It has the kind of taste that makes you want to drink it when you're drinking fresh sake. I like it as a sake-within-a-sake, and it's good to have a bottle on hand.
